Everyone should learn to look at recipes and break them into steps and then figure out how to change and improve them. Much like adding coffee to chocolate or a pinch of cinnamon to a graham crumb base. For most recipes that require oil or butter I now do a 50/50 mix, which gives me the lightness of oil and flavour enhancement of butter. In particular, a bar-cookie style that is made in a pan and then sliced into long, thick fingers.
