    In this video, raw food chef and author Jennifer Cornbleet demonstrates how to make a delicious, nutrient-rich raw food chopped salad recipe from her book Raw Food Made Easy for 1 or 2 People.
    Chopped salads are a well-loved menu item at fine restaurants around the world. In this demonstration video, Jennifer shows you how to create a colorful raw version that is an exceptionally satisfying one-dish meal made without animal protein.
    What makes a chopped salad such a tasty delight is the way the different flavors come together in every single bite. Jennifer demonstrates how to chop all the veggies into uniform pieces so you wind up tasting every ingredient with each forkful.
    The first ingredient is crisp Romaine lettuce. Jennifer shows you how to use a knife to remove the stem end and chop the leaves neatly. Next you'll discover how to seed and chop a cucumber so that it is in perfect harmony with the other ingredients.
    Always conscious of nutrition as well as flavor, Jennifer adds orange bell pepper and tomatoes, which add a "helping" of vitamins and antioxidants to this tasty meal.
    With all the veggies chopped, it's time to add a dressing. Jennifer shows you how to create her marvelous Classic Vinaigrette. It's made with cider vinegar which is easier to digest than red wine varieties, and it has a fine fruity flavor.
    For non-cider vinegar fans, Jennifer offers her suggestion for a different vinegar that will lend a more traditional taste to the dressing. And for waist-watchers, Jennifer has a great raw food trick using lemons to lower the fat content.
    Just when you think it can't get any better, Jennifer adds soft creamy avocado, the piece de resistance to the salad. She shows you how to prep the avocado and explains why it should be the last ingredient added.
    If you love salad, it will probably quickly become one of your favorites!

    Why do you remove the cucumber seeds?

      Farski Doodle I remove the seeds just to create a more pleasing
      texture--but if the seeds don't bother you, it's just fine to leave them in!
