Hi! It’s totally normal for orchids to have aerial roots. You can keep them that way and mist them instead of putting them into the pots. They love hanging their roots out of the pot that way.

Its been 2 years since ive had another flower spike on an orchid and I have 4.

Oh, watched the video again. Roots and spikes can grow from between leaves. Spikes always, roots not always is what I understood
