    Had a few emails on this one, so i thought i would do this simple recipe. Simply dust the seasoned fish in flour and fried (deep or shallow).I have used butter with a touch of oil. 2 mins a side and they are done, sqeezed lemon all over at the end. Super.

    so im guessing there is also no need to re scale them? we never used to remove anything on small fish
