I’m the proud daughter of the inventor of The Durand®, Mark Taylor (which he had patented in his 80’s, by the way!) - and I suspect you’ll appreciate knowing that it was actually named for his dear friend and mentor, Jean-Pierre “Yves” Durand, a world-renowned master sommelier. Yves would lead rousing cheers in French at wine tastings, where his incredible knowledge of wine was only exceeded by his joie de vivre!
I was told to cut the foil like you said but no one knew why we cut it so low. I didn’t know the history behind leaded foil and now we keep that tradition. Awesome!
I remember someone told me that Russian vodka used to come with a pry off cap because you never opened a bottle you were not going to finish. That is how I treat wine.

The coravin was a game changer for me. I felt guilty opening a bottle before i got one, and never really drank wine beforehand knowing i only had a glass every few nights and it’d noticeably degrade in quality. Both my enjoyment of wine and the wines i got have improved since.
I have no wine “knowledge” whatsoever and I’m truly not much of a fan. That said, CANNOT GET ENOUGH OF HIS VIDEOS. Whenever you see someone who’s this good at their craft, its great to watch.

That Coravin is definitely a must buy and really cool tool to have if I am going to start a hobby of buying wine when I grow older and more richer, really.
I remember one time where my grandfather was opening a bottle of champagne for some celebration, he was having a hard time with the cork and we asked him if he needed any help he said no and after a moment of struggling pulls the bottle back to look directly at the cork, at which point the cork decides now is a good time to release itself. Most spectacular Black Eye I ever saw and the most embarrassed I think I ever saw my grandfather.
The fact a sommelier not only endorses saber-ing, but starts the video off and has a waterproof transport box for his kit to do it is incredible! I approve!
I've done sabering twice with a real sword, it's really fun. I was told that as well as the bottle being cold, you want to run the blade down the barely visible seam where to two halves of the bottle are fused together, where that seam meets the lip is where most of the stress gets concentrated and you get a nice clean break right below the lip.
I'm a Muslim, I don't even drink but I've watched lots of Andre's vid. And I think his very humble and educational not to mention very articulate in his speech.
Just wanted to say that André Mack is an expert and he knew that bottle might explode when he sabered it. This most commonly happens when you leave the bottle out and don't super chill it before sabering. I usually don't remove the cage when sabering, but everyone has their own style. Respect!
My Coravins are my absolutely favorite items in my house. The needles are super fragile, but I absolutely love both my timeless and the sparkling system! Andre you are a treasure!!!
Wow I did not know Andre was the sommelier at the French Laundry, huge respect. Not that I wasn't impressed by his well of knowledge in wine and his enthusiasm already.
I was working for Total Wine when the Coravin first hit the market and it really was a game changer for high-end consumers. My store had extremely wealthy clientele that would come in once or twice a year or so to stock their cellars, pretty much only dealing with myself or my manager directly literally dropping well more than my annual gross at a time, sometimes even 3 or 4x my annual, and when the Coravin hit pretty much all our high end clients each got at least one and began coming in much more often to see what was new that they could use it on to see where things were at for themselves and then commit to larger quantities later.
A good wine friend went to portugal and got into port. Hooked. He brought back some port tongs. Check that out some time. Super cool and fun to do. Works like a charm

How long does the argon capsules last and how much do they cost? On table wines I don't really have this issue but I would love to have one for Port Wines

It was always on my bucket list to saber a bottle of sparkling or champagne and I finally go the opportunity this past winter in Vail, Co to kick off Happy Hour at the hotel I was staying at. Went smooth and was such a cool thing. I was told that there is a small seam that is barely visible in bottles and that seam is best faced upwards because it's a weaker part of the bottle. I used a napkin to hold the bottom and pop! It was awesome.
I was kinda daydreaming while staring at the video's thumbnail and i thought the big text thing read "Sober". I was confused and came to my senses and realized that it actually read saber lol
The durand can be used to remove a cork without damaging it such that it can be recorked with a proper seal, provided you don't use the screw combination.
Watching the cork start to get pushed out of the bottle, just before Andre completes his sabering move, highlights just how much pressure was under the glass.
Okay but can we talk about the bottles in the background? Dirty and Rowdy, Bow & Arrow, looks like some Swick and Jolie Laide. And then Fernet on the left? Not only does Andre like good wine other than his own, but great beverages all around.
DAMNIT. I'VE WORKED IN A FEW FINE DINING RESTAURANTS AND A DURAND WAS NEVER MENTIONED FOR OUR OLDER BOTTLES OF WINE. THANK GOD I'VE NEVER MADE A FOOL OF MYSELF OPENING THEM.
I did it with some Champagne bottles, everything went cool. You can practice it using those $3 buck sparkling apple juice bottles and your kitchen knife you don’t need the expensive nice case, only be sure to keep the bottle really cold and strike it with guevos following the bottle shape.

Not that is really matters, but in the late 90s, I was the marketing director for one of the largest wine importers in the Southern US. At a trade show, we flew in a French man using a true Napoleonic sabre to open a Jeraboam of Dom Perignon to fill a cascade of Champagne glasses stacked in a pyramid. It was truly impressive and only cost about $65,000... Most of that money was spent on the sabre's insurance and loan and travel...

It was always on my bucket list to saber a bottle of sparkling or champagne and I finally go the opportunity this past winter in Vail, Co to kick off Happy Hour at the hotel I was staying at. Went smooth and was such a cool thing. I was told that there is a small seam that is barely visible in bottles and that seam is best faced upwards because it's a weaker part of the bottle. I used a napkin to hold the bottom and pop! It was awesome.
I was kinda daydreaming while staring at the video's thumbnail and i thought the big text thing read "Sober". I was confused and came to my senses and realized that it actually read saber lol
The durand can be used to remove a cork without damaging it such that it can be recorked with a proper seal, provided you don't use the screw combination.

DAMNIT. I'VE WORKED IN A FEW FINE DINING RESTAURANTS AND A DURAND WAS NEVER MENTIONED FOR OUR OLDER BOTTLES OF WINE. THANK GOD I'VE NEVER MADE A FOOL OF MYSELF OPENING THEM.
I did it with some Champagne bottles, everything went cool. You can practice it using those $3 buck sparkling apple juice bottles and your kitchen knife you don’t need the expensive nice case, only be sure to keep the bottle really cold and strike it with guevos following the bottle shape.
And do remeber to use the backside of the blade and not the edge, don't want to ruin the edge when the backside works just as nicely
I'm not a wine expert but I but I really appreciate your down-to-earth relaxed feel. Seems like the other Sommeliers I've watched are very uptight and rigid like an android for some reason

Not that is really matters, but in the late 90s, I was the marketing director for one of the largest wine importers in the Southern US. At a trade show, we flew in a French man using a true Napoleonic sabre to open a Jeraboam of Dom Perignon to fill a cascade of Champagne glasses stacked in a pyramid. It was truly impressive and only cost about $65,000... Most of that money was spent on the sabre's insurance and loan and travel...
I have only have had box wine and Joshua wine(My IRL name) in my life.. but i could listen to this guy go on for hours about wine.
