Yves would lead rousing cheers in French at wine tastings, where his incredible knowledge of wine was only exceeded by his joie de vivre!

The coravin was a game changer for me. I felt guilty opening a bottle before i got one, and never really drank wine beforehand knowing i only had a glass every few nights and it’d noticeably degrade in quality. Both my enjoyment of wine and the wines i got have improved since.
Just wanted to say that André Mack is an expert and he knew that bottle might explode when he sabered it. This most commonly happens when you leave the bottle out and don't super chill it before sabering. I usually don't remove the cage when sabering, but everyone has their own style. Respect!
I was told to cut the foil like you said but no one knew why we cut it so low. I didn’t know the history behind leaded foil and now we keep that tradition. Awesome!
It amuses me deeply that all the kitchen staff can be railing coke all night but the sommelier is spitting out mouthfuls of 10% wine to be professional.

I remember one time where my grandfather was opening a bottle of champagne for some celebration, he was having a hard time with the cork and we asked him if he needed any help he said no and after a moment of struggling pulls the bottle back to look directly at the cork, at which point the cork decides now is a good time to release itself. Most spectacular Black Eye I ever saw and the most embarrassed I think I ever saw my grandfather.
The durand can be used to remove a cork without damaging it such that it can be recorked with a proper seal, provided you don't use the screw combination.

As for the "Sabrage" technique of a champagne/sparlkling wine bottle, to make sure it doesn't explode like it did with your demonstration, make sur you slide your saber along the line where the twos halves of the bottle are welded. Never again waste a drop of this delicacy ,and of course, embarass yourself.

If those big 5 liter bottles of wine take longer to age than standard bottles, then why not age wine in like, airplane liquor bottle-sized bottles? Like tiny little things. Would those age faster?
Because fast aging is not good. The process is not the same. Same goes for alcoholic fermentation. if ait temp is too high, people tend to refresh/ cold the tanks, so the fermentation takes longer. Roughly speaking, It brings more the flavors.

If you look carefully at 2:37, you can see that the cork was already being pushed out by the pressure of the bottle. Might have affected the bottle exploding the way it did.
I think that could be what he meant about the needing colder temperatures before doing it. Increased temp, Increased pressure, cork coming out. Could be exactly why it's a problem actually, good spot

Wow I did not know Andre was the sommelier at the French Laundry, huge respect. Not that I wasn't impressed by his well of knowledge in wine and his enthusiasm already.
I did it with some Champagne bottles, everything went cool. You can practice it using those $3 buck sparkling apple juice bottles and your kitchen knife you don’t need the expensive nice case, only be sure to keep the bottle really cold and strike it with guevos following the bottle shape.
I thought his wine key was pretty cool, thought it would be of pretty good use to me as a bartender, so I clicked the affiliate link only to find that it is $120 💀I love wine but I'm not on the $120 wine key level yet. Maybe one day lol

I did it with some Champagne bottles, everything went cool. You can practice it using those $3 buck sparkling apple juice bottles and your kitchen knife you don’t need the expensive nice case, only be sure to keep the bottle really cold and strike it with guevos following the bottle shape.
And do remeber to use the backside of the blade and not the edge, don't want to ruin the edge when the backside works just as nicely
