- Ooey gooey Mozzarella Cheese Stuffed Meatloaf. This ain't your momma's meatloaf! This flavorful ground beef is stuffed with mozzarella cheese. A modern twist on a classic dish! Your family will love this easy weeknight dinner!
Prep Time: 10 minutes
Bake Time: 1 hour
Yield: Serves 4 to 6
Ingredients
1 lb ground beef (85%)
1 cup bread crumbs
1 tsp dried basil
1 tsp dried oregano
1 tsp dried parsley
1 tsp salt
1/2 tsp black pepper
1/2 cup milk
2 TB worcestershire sauce
8 oz fresh mozzarella, sliced
Glaze
1 cup ketchup
1/4 cup brown sugar, tightly packed
1 TB worcestershire sauce
1 TB red wine vinegar
2 cloves garlic, crushed
1/8 tsp salt
pinch cayenne pepper

Tried it like it. Then tried this ;
Added sliced black olives, slice banana peppers over the mozzarella cheese, and used stewed tomato sauce with basil leaves.
Glaze was very good Yum 😋.

I made a stuffed meatloaf a few days ago (my first time, actually), but I used a different technique. After mixing all my ingredients into the meat, I formed more or less a rectangle with the meat and laid it on some plastic wrap. I then added another piece of plastic wrap on top and pressed it down with a cutting board. This gave me a wide surface on the meat, and I applied the ingredients I was putting in the center of the meatloaf on one side of the meat. Then, by lifting the plastic wrap, I folded it over and molded the edges together.
The result was that the ingredient in the middle (okay, it was a Mexican themed meatloaf and I put corn in the middle; topped it with salsa instead of ketchup) stayed in the middle of the meatloaf and didn't leak out.
Making this again tonight!! Yummmm!!

This meatloaf is insanely good. I recommend eating it on top of buttered bread (preferably homemade with seeds), with 2 poached eggs on top. So delicious

I copied this recipe to the T and it make out wonderfully! My brother had been complaining that our mom's meatloaf was never to his liking, so I told him I'll be doing it your way and he loved it.

It's easy to roll it into a pinwheel, using wax paper. Much prettier and the flavors are better distributed.
Is there a reason you don't use any eggs in the recipe? They work really well in binding the meat and other ingredients together.
Do I have to double the cooking time if I double the amount of ingredients used?

Made this last night. Awesome. My husband has a very limited palette and saying meat loaf would send him running in the other direction! Lol. He loved this. The only problem I had, was the cheese got hard and wasn't creamy. I used fresh mozzarella too! Any thoughts about what could have happened?

I have tried this recipe several times in the past and my wife and I love it. However, my cheese seems to ooze out of all sides of the loaf. Thinking of trying with less cheese inside the loaf and some shredded mixed with the meat. Just a thought.

I found gluten free bread crumbs at my grocery store and used those it came out amazing
Skip the cayenne pepper & you got a good meal. 😄

Sorry. I misread the ingredients. However, I made it and I love it. i have one serving packed for lunch at work.
I hear that folding the ingredients together and mixing by hand as little as possible is best to keep the meat soft so it doesn't turn out too tough

You did not add the brown sugar on your video. You should have your hair pulled back and or a hat. Also when hand mixing latex throw away gloves work great for contamination and cleanliness. Great dish and I will make it again.
Bummer... I followed the video and doubled this recipe, just to realize after it was done that the brown sugar is left out. Still good, but not the 5 stars I was hoping for.
