    growing up with 4 brothers and 4 sisters my parents had a few challenges keeping us all fed.... my stepfather would get his limit in Moose and Deer and supplement it with farm raised pork and chickens ... we did have an Elk one year got it from an Elk farm it was the best of wild meats I had tasted..... somewhere between rich pork and young deer, the texture was insanely good .. I am living vicariously through you guys ...lol

    Well dangit, now I need to go shoot another elk. Been too many years anyway. THANK YOU for cooking it rare...so many people cook it through then complain about how tough it is. NO fat in that meat. LOL
    Never thought about elk sushi, but wow that looks amazing!

      I bet sous vide would be a good way to cook elk, then. No chance of overcooking it, that way.

    Hiro san own creation is always looked great and delicious.
    And Hiro san is certainly a very humble chef, admirable chef in the world,not like any other normal chefs whose often talk a lots and whose have a big mouth and with the cocky attitude, but in facts that they just have a tiny of knowledge which I have often seen their shows on BBC , ITV channel in England.
    Their tv show programs in England , to me is like a political propaganda on about their dishes ,and because of that it made many people think these chefs are the best cooks that they have seen on TVs .
    As I have seen the excellent skilled of the Chef Hero San, I would recommend the Michelin stars institution to award chef Hero san as the world top chefs above the 5 stars level of skilled in the Art of gastronomy , not less .
    And I am wondering why the BBC,ITV tv have not asked Chef Hero san to
    run his cook show on theirs tv channel which I
    believe that can be a big hit in cooking programs of which Britain have missed.
    Keep the excellent works , master chef ,

    The Elk was cooked perfectly. Elk, Mule Deer and Whitetail Deer all have a different flavor profile. As a hunter I prefer each to lamb.

    I like eating elk raw. Now I will use raw elk in sushi. I can’t recommend anyone do it but I have no issues. I actually digest it better. Not too off from raw tuna roll

      Look up Estes park Colorado. Its a town smack in the middle of their migration areas in Colorado. Whole town gets absolutely over run with them yearly. Great vids here.

    What a beautiful place. Seeing all does deers in the wild. So cool. I like the roll. Very creative. I have use deer meat before. I made sausages. For me it was a bit dry because deer meat is very lean meat but it was good in flavor.

    Elk is deer, so is moose. The only commercially eaten "deer" or venison in the US is red deer from New Zealand I believe. Most people when they think of deer meat is probably white tail or possibly mule deer.

    With wild game meat it needs to be bled out some so it’s not so strong. Just leave in ice for a couple days.

    $30 per lb? Holy cow! It costs me less than $20 for a whole elk and I never have to leave my property. I do wish they would stay out of my hay though. Bunch of royal pests they are about hay and they are murder on my fences too.

    God loves you all and you can all be saved (if not already) by just putting faith in Jesus Christ and repenting of sins (turning to God from sin and changing your mind on sin)
    And you should ask for forgiveness of your sins (this can be anywhere) have a nice day
    Jesus is my lord! And the solution to hell!
