      They probably saw the pot in the thumbnail and thought he was about to boil the sweet potatoes like I thought. I watched to see if he didn't because if he did I'd have ranted hahaha. I love potatoes 😊

      I think some people don’t realise they can just click away. Even a tasteful comment with constructive criticism would be better then just hitting 👎. How are you meant to address a 👎? You can’t do anything with that feedback.

    Thanks for the help with this.... I like this method of steaming. I decided to make this as a base for a savory/sweet turn-over or pastie. Sweet Potato mash with some ground beef, roasted pecans, and a little maple syrup in a pasty shell..... turned out ok. Definitely season as you go....I always get so wrapped up in cooking that I sometimes forget to season....

    Great video! I'm definitely going to try this, but we have a Vitamix, so instead of mashing by hand, I'll "mash" the potatoes up in there and mix in the milk mixture after. Thanks for all of the options for seasonings and flavorings. That was helpful too. I also liked that the video wasn't too long too.

    I would like to know tips for cooking for many people. Daily I cook for 2-3, but when it comes to cooking for 8-10 people, I stressed out sometimes. Kitchen suddenly becomes too small and sink piles up so fast...

    I vote for roasting them. Adds a nice depth to offset the sweetness of the potatoes. And NO marshmallows, please! Toasted, buttered and salted pecans on top...yes!

      @@Poppi_Weasel Roasting is done at a higher temperature, typically 400F or above to create a brown crust on the outside of the food.

    roasting would be the better way to go for cooking the potatoes. the heat does something magical to the natural sugars in them.

      the N.Ayisha I roast mine too. Low and slow in the skin then scoop out the flesh when they are done.

    Steam those sweet potatoes in a pressure cooker. Use handmixer to whip those sweet potatoes into shape. Then sprinkle brown sugar or drizzle maple syrup on top with some butter. No brown sugar in the potatoes at all.

    My dulce de leche is always so grainy and crystallized, what can i do to prevent that and is there any specific kind of milk to use? thank you ❤️

      I don't know if we are talking about the same thing because I live in South Africa. Because dulce de leche is so expensive, I usually buy a few cans of regular condensed milk, especially if they are on promotion. I then boil the cans in deep water for about 2 hours. Turn the stove off and leave in the water to cool down completely. Be very sure it is cold before you open a can for it can blow up! And there you have perfect dulce de leche for recipes. You can of course dilute it with milk or cream if you need a thin sauce.

      I assume he’s using diamond crystal, or a similar salt. It’s SIGNIFICANTLY less salty than your typical table salt or even morton’s kosher.

      You can make your own. Half and half is half heavy cream (double cream or whipping cream) and half whole milk.

    Skip cutting , we know how hard that is if your hands hurt from old age . Steam whole till tender and add the rest and mix . Can't tell the difference

    An instant pot works MUCH better for this. The potatoes come out completely done, and the skin practically falls off. No peeling or chopping needed.

    Why steam them and not roast them? It dries them out more and makes them want to absorb more fat and make them more creamy and taste better

    Yea sorry ofcourse a nice guy. But the recepie people. Brown sugar makes it so sweet, that's a lot of salt and lotta butter as well. Specially those thick chunks for decoration! unless you are used to the American high fat diet. If you want a desert then ok brown sugar and cinnamon n nutmeg or clove go well.
