Chef!!! I appreciate your plethora of videos online. The husband brought home scallops from Pensacola. And I made your appetizer, thank you! I used Brie instead of the Swiss. No alcohol... so I used just a bit of chicken base. We grind our grains for flours, so I make a wonderful roux. I used soft organic wheat for this roux. As I watched you add the milk, I learned to go slowly and stir continuously. We loved them and this will be a dish that we will enjoy forever!!! Thank you!!!

I've been in some pretty scary situations, but none prepared me for the fear I felt when chef scooped out that whole spoon full molten sweet potato and then I waited in terror for him to eat the entire thing. He got me to yell at my phone, and it made my wife come in and ask who I was talking to. 🤣 Thanks Chef keep it up!
