Flour dredge:
3/4 cup all-purpose flour
3/4 cup rice flour (substitute with corn or potato starch/flour)
1 tbsp old bay seasoning
1 1/2 tbsp onion powder
1 tsp garlic powder
1/2 tsp black pepper
Maldon salt to finish
