    This is one of my husband's favourite breads which goes well with cheese and wine. Hemp seed can be substituted with any other seeds/nuts

    * Less water is needed for DIY ground seeds/nuts flours
    Dry Ingredients
    143g vital wheat gluten flour
    113g flaxseed ground
    75g lupin flour
    75g blanched almond flour
    45g hemp seeds
    3-4 tbsp erythritol sweetener
    2 tsp sea salt
    3 tsp dry instant yeast
    Wet Ingredients
    150-170g warm water
    1 tsp honey
    2 whole eggs (103g in total without shells) - reserve 1 tbsp for egg wash
    40g olive oil
    Mix & knead until the windowpane test can be achieved
    Proof for an hour
    Preheat the top/bottom oven at 200C/392F for 10 minutes
    Lower the temperature to 180C/350F
    Spray lots of water inside the oven
    Bake for 25-30 minutes
    Cover the dough with an aluminium foil if browns too fast
    * Adjust the oven temperature & baking time according to the specifications of your oven.
