    You gave me the confidence to make these all of the time now. I must admit I fill them to the brim. I use buffalo mozzarella, regular mozzarella, ricotta, mushrooms spinach. I make my own pizza sauce and spread that nice and thin out on the dough along with olive oil before adding fillings. Today I’m making two because I’m having company so the second will be turkey sausage, turkey pepperoni along with all the cheeses and sauce. I give everyone a little side dish of pizza sauce so they can dip while they eat. Thanks again! These are so much fun to make! ♥️

    I like to mix ricotta, fresh grated parmasiano reggiano cheese, garlic and some olive oil. Adds some nice extra flavor.

    What would be the ideal fresh herb to tuck in there?
    Garlic butter on the inside would be amazing as well.

      It was wonderful!! I made 2. One just like the recipe, and one with chives (regular and garic chives) Both were amazing!!

      If you have a pizza dough in hand that is just simple as a sandwich but if not that would get harder when you have to make your pizza dough. Anyway you can buy a frozen pizza dough😄

    I do not use olive oil on top of the dough, i use egg wash. I use egg wash two times. It makes the dough completely different, it becomes soft, almost like soft pretzel or a chala. Not saying it is better, but it is different.

    I suggest instead of mozzarella and ricotta, feta is an amazing combo with spinach.. Itll be something like spanakopita ;) (greek spinach pie)

    Just curious, wouldn't it be better to salt the spinach after squeezing out most of the water and then let it sit for a few minutes to draw out any water remaining in the spinach. Then add it to the calzone with the ricotta and mozzarella. Same amount of seasoning ... but maybe a little less chance of excess moisture. Just a thought.

    Most neighborhood pizza shops will sell you dough for $1.00 mine does. Makes it nice if your in a hurry or don't have any on hand.....Just a tip.
    Looks great, Mmmmmmmmm.......yum.

    do you think it is possible to replace the spinach with some peppers? Is ricotta the same as cottage cheese?

    if I use fresh spinach do I have to cook the spinach first?

      No, I don't think so. I add fresh spinach to my pizza and lasagna all the time and I never cook it first because it shrinks so much. You may want to chop it up first to make it easier to handle when folding the dough over to seal.

      If you're replacing 10 oz of frozen spinach with fresh ones, you're gonna need A LOT of fresh spinach and it's gonna cost few times more than a pack of frozen spinach does. I'm also pretty sure you will have a lot of liquid rendering out if you were to use 10 oz of fresh spinach.

      ***** Yes you may need more fresh spinach but it will not render more liquid. Frozen spinach has been precooked/steamed which is why there is so much water in it. Fresh spinach does not render much liquid at all when cooked. Just speaking from my own experience.

      Tanya Goodman not sure,frankly as I watched her videos more,I like her,I guess she seemed kind of crabby and bitchy at 1st she has a very very dry sense of humor that makes her come across that way....Made a too quick judgement I reckon....However if it makes you happy her recipes are great.Cheers!
