It happens because ofonly one reason. Milk neeeds to be at perfect temperature otherwise high heat will turnit into paneer or ricotta cheese. Flavor and texture becomes different too

I have tried making this exactly like the video it was all going well, the curd form from milk also done it but when I put the cheese in hot water and then tried to pull then it didn't stretch it keep on breaking and in last it was looking like a paneer can somebody tell where I was wrong in the process
She has explained temperature of milk has to be checked with poking finger in it. when ur finger feel hotness after poking at that point turn off the flame and add vinegar step by step..

The milk should be just slightly warm when we curdle it..this happens when u heat up the milk more than required
