I love foraging for nettle myself, Not hard to grow either, just need to clip a bit of the roots off and it will spread.

Thanks, perfect timing! I was just looking at my big patch of nettles and wondering if I needed to blanch them before making pesto. Other pesto ideas I have tried, parsley, rocket and nasturtium too. All super tasty. :)

Great recipe idea. How do you store? Freeze, canner, or just refrigerate and use?
We froze anything that wasn’t going to be consumed before going bad. We’ve eaten it from the freezer since and taste/texture is pretty much the same as fresh

Yes, we freeze whatever isn’t consumed right away ☺️
Good healthy recipe :). You are a bit late to pick the nettle . I only pick the tops when it's just off the ground, or maybe up to 5 inches high. Its too tough after that - good for chickens and pigs :)
Thanks for this, I live in a city so don't have access to quality fresh nettle leaves (pollution, etc). Can I rehydrate dried leaves and do this?
I do a cilantro pesto with avocado oil, salt, garlic, lime juice, and sometimes a hot pepper. It is delicious. It makes an incredible marinade for red meat.

I used to make sage walnut pesto. I had a huge plant. It was easy and delicious.

Have you tried the pesto without blanching it? I've added nettles to smoothies & when it's blended, it doesn't sting.
We haven't. You're braver than we are. Lol

I've got an herb cutter and stripper tool I got online that you can just pull the stem through a hole and it takes all the leaves off for you. :)

I gotta see this, because those things are nasty. Not as bad as lion's mane jellyfish though which I'm sure you're familiar with.
