Haven't tried the Costco ones. On the Trader Joe's one I usually place a slice of sushi pink ginger on the top and dip the Kimbap in soy sauce, just like eating sushi.
Imho, Koreans consume kimbap at picnics or on a hike, so it makes sense that it's not spicy. Koreans often use salt, pepper, sugar, sesame oil and sesame seeds to season their rice/veggies used in the ingredients. Of course there are no rules how you eat it, I'm sure it's more tasty to eat it with kimchi, but not all Korean dishes are spicy. Actually my favorite Korean soup is very mild, it's seaweed soup, often consumed on one's birthday!

I saw this a while ago and thought it was a bit expensive for something that doesn’t have meat, so I skipped it… only to hear that everyone loves it, but now I can’t find it anymore.
