Alber's Homemade Corn Bread

  • This corn bread is always highly requested amongst all of my friends! Anyone who's ever had this recipe, always asks for the recipe. It's so moist and not overly sweet, at all. :)
    INGREDIENTS:
    1 cup of Alber's yellow cornmeal
    1 cup of all purpose flour
    1/4 cup of granulated sugar
    1 Tbsp of baking powder
    1 tsp of salt
    1 cup of milk
    1/3 cup of vegetable oil
    1 large egg, lightly beaten
    honey
    INSTRUCTIONS:
    1. Preheat oven to 400 degrees F.
    2. Grease a 9x9 inch baking pan (may use an 8x8)
    3. Combine cornmeal, flour, sugar, baking powder, and salt into a large mixing bowl.
    4. Pour your milk into your dry ingredients.
    5. Combine your oil and lightly beaten egg into a small mixing bowl, and then pour it into your large mixing bowl.
    6. Using a hand mixer, mix until just blended and pour into prepared pan. Do not over mix.
    7. Bake for about 20-25 minutes or until toothpick inserted into the middle comes out clean. DO NOT OVER COOK.
    8. Drizzle some honey all over the hot corn bread, allow it to soak for about 15 minutes, cut and enjoy warm! :)

    Haha, I totally laughed when you were talking about how your daughter ditched you. You're hilarious! This is only my third video of yours that I have watched and I am in LOVE with your cooking videos! You make it so easy to follow and the videos are so enjoyable.     I added 1/4 cup creamed corn, buttered and brushed it with a bit of honey while it was hot.....and it was yummy!!! with my verbena/sage tea ☺

    So I tried a cornbread recipe yesterday and while the taste was good I hated the texture... However, this recipe turned out perfect, wonderful texture and taste... I added shredded sweetened coconut to mine and it was PERFECT😋😋.. Thanks for sharing

    I like parts of this recipe but I use buttermilk plus a 1/2 tsp baking soda along with the baking powder. Also, no non stick spray, tastes terrible. I also use two eggs and 3/4 cup melted butter. Omit salt if salted butter.

    I like corn bread but i didn't know people make it sweet with honey and sugar, so if i want to keep it 'regular' like for soups and chili do i just omit the sugar and the honey? it looks really fluffy and tasty

    I use this recipe, except two eggs and 3/4 cup milk. It isn't quite as "crumbly" with two eggs, is the only difference. (If you just chuck another egg in the batter without reducing the amount of milk the batter will be too thin.) DO NOT forget to add the honey to the top while it's hot!

    Tried this recipe- on its own the cornbread isn't sweet and has a tiny bit of grit from the finely grit cornmeal. If you want it sweet you have to use a TON of honey. I found I used a lot and when I cut into it the honey only seeped down a centimeter into the cornbread. The parts that were coated in honey were delicious, but take my advice and use a lot more honey if you like sweet honey cornbread. Omit if you don't like it sweet. It pairs well with salted butter (for both sweet and savory cornbread) and jalepenos can be put in the batter for a spicy savory kick!

      Yes,I've done it before. It works fine replacing oil with butter. Also,you can add butter to the top, with the honey,and slice each piece in half and put butter on like you do toast.

    It doesn't make a difference what cornmeal you use. Corn meal is pretty much corn meal.
