Citrus Crusted Salmon Tataki recipe: blackstoneprod...
Ingredients
1 lb skinless salmon top loin filet
Zest of 2 limes
Zest of 2 lemons
Zest of 1 large orange
¼ cup Duke's mayonnaise
2 tablespoons hoisin sauce
1 tablespoon sriracha
1 teaspoon sesame oil
2 tablespoons ponzu
2-3 tablespoons thinly sliced green onion
Black and white sesame seeds
Salt and pepper
Olive oil
Directions
1. In a small mixing bowl, combine the mayonnaise, hoisin sauce, sriracha, and sesame oil. Mix until well incorporated.
2. Spread the lime, lemon, and orange zests on a cutting board. Season the salmon filet lightly with salt and pepper, then roll the filet in the zests, pressing gently to coat all sides.
3. Heat your Blackstone griddle to high heat and drizzle with olive oil. Add the salmon filet and cook for 30 seconds per side. Remove from the griddle and gently slice into medallions.
4. Spread a bit of the sauce mixture on the bottom of each serving plate, then drizzle with ponzu. Place the salmon medallions over the sauce and garnish with thinly sliced green onion and sesame seeds.

Ok I LOVE Sushi too, however Sushi grade Salmon is well over $35.00 a lb. I would NEVER cook that, I'd just eat it as Sashimi. I'd use another grade of Salmon, because cooking and seasoning COMPLETLEY changes the flavor. I still love what you've done, but I'm NOT going to cook Sushi Grade Salmon, I'll try another grade.
More fish, more salmon, more tuna and more cuts of fish folks might not know… cod is a snore and tilapia is a bore
