Even though your ingredient amount recommendations are a bit unconventional, we quickly understood that there is flexibility in the amounts used. We tasted it last night but we intend to feast on it today. I think a night of tempering in the refrigerator improves this kind of dish by allowing the flavors to meld.This was our first effort at making a Palestinian dish. It will not be our last!
Have you ever tried cutting into chunks and putting in air fryer? It comes out incredibly smoky and delicious. Also, doesn't need much input, very easy. I do this also for salads. Thank you for the recipe ❤

This is AMAZING!!!! I could eat it by itself with a spoon!! Made it for the first time tonight & even bought pomegranate molasses to drizzle. I never cared for eggplant until I tried this. Thank you!!
Some tips from my own experience: 1. Keep the eggplant whole, the steam created cooks the inner part efficiently (just don't forget to rotate frequently otherwise it may explode...) 2. Use a fork to mash, I like keeping the eggplant threads as a final texture. For garlic I just add zhugg

You can also just cut it in half lengthwise and slow roast the eggplant in the oven and cover it - and then quickly broil it at the end! Broiler can be a friend :) Grill is king to be honest, when I have access to a grill I always do it that way

When you say "on a grill", are you talking charcoal? I literally thought about doing something like this a couple weeks ago, but I was afraid that charcoal flavor would be a little overpowering. Maybe I need to revisit it now?

Is it really smoked eggplant though? It’s grilled I’ll give you that. But there’s no aromatic or wood burning underneath it to impart smoke onto the vegetable. Regardless, great recipe I’m sure, I might try it because I’ve always wanted to cook straight on the fire of the gas stove.

zhugg is great if you want it super spicy!! or shatta/homemade chilli paste (I have a recipe up for this)
I love the paste,I actually made it last night with the additional pomegranate paste.We all licked our plates.Delicious 😋😋😋
I like your version but just an fyi, I've used cashew yogurt, which works very much the same as dairy yogurt. I'm on plant based/vegan diet.

Good to know. Ironically I get the dip from a Russian market. The magic of the dip is it has a lot of garlic but is not bitter at all.
