Because it's how a classic chocolate mousse is made
Yolks make mousse richer, whites just create more volume at the expense of that consistent luscious texture you get with just yolks.

What is the food safety bacterial kill step on the Chocolate Mousse? Did I miss it? 160 degrees Fahrenheit or higher for egg dishes.
A proper mousse is made with raw eggs. No cheating with whipped up double cream folded in .

Is it safe to eat chef?? Because the chocolate mousse is made with swiss meringue.. not italian meringue..
Thank you for your inputs. Well, chocolate mousse can be done with the 3 known meringues: French, Swiss and Italian. Getting sick or die from a raw or semi-cooked egg is extremely unlikely unless you live in extreme filthiness and allow huns and roosters to fly and raise chicks in your kitchen 🐣🐥. Enjoy that cake and sleep tight 😋😴
