Black Forest Cake Roll - Bruno Albouze

- Black Forest Cake (Forêt Noire) is a German dessert Schwarzwälder Kirschtorte. It combines rich chocolate cake layers with cherries and Chantilly. This recipe is inspired by chef Thierry Bamas (MOF). The technique used for the chocolate sponge isn't something we are familiar with. It is based on a pate a choux-like-dough concept which offers an unique flexibility. The whole thing is then layered with cherry marmalade and luscious vanilla Chantilly and glazed with chocolate ganache. Enjoy your holidays!

You're not just a chef but an artist. You're one of the few over-the-top chefs I adore. It's because you know how to do over-the-top the *right* way without creating work that's too precious. And you've got a great sense of humor while still taking your work seriously. I feel like you could balance yourself on the head of a pin.
But I have to say from my own time spent in a professional kitchen, I'm so glad I'm not one of your assistants. It seems to me you go out of your way to dirty every piece of equipment you own. And I think you own them all! Except for maybe a blast freezer. 😁

My 3 favorite cakes are Boston Cream Pie, German Chocolate with pecan coconut icing and Black Forest Cake. The later is my favorite for Christmas I like to use 2 kinds of cherries. The dark Bordeaux which I use inside the cake but on top I love those bright red Christmas looking cherries. It has both sweet and tart cherries and it is always delicious. This year I was thinking about doing it a new way. I think you just gave me that. Thanks a lot and it looks devine!
