    I was told years ago to skim the grease from soup, take some paper towel and lay a sheet on top of the soup and it absorbs the grease. It works wonderful
    When you skim it using a spoon or ladle, your removing a lot of the soup but the paper towel absorbs only the grease. I use this method all the time.

      Paper towels absorb water when you’re cleaning up, etc so I don’t see how that can be true. You’re definitely absorbing the broth at the same time. I believe the thinking is the grease layer is on top of the soup so you’re absorbing that but you can see in the video it collects to the outside and the broth is in the middle.

    Have made this several times. You don't need this much chicken for the soup. Just bake up some thighs or breasts and take it off the bone. Follow the recipe other than that...it is really delicious! Thank you Laura!!

      Yes the thighs are a very good idea. I will double up because to me the abundance of chicken in this recipe has me motivated. Just not a whole chicken

      Peggy Riley I agree. Maybe a package of boneless thighs and a breast is enough chicken. However, the whole roasted chicken looked so yummy, I want to do one.

    Hi Laura, thank you very much for this recipe. I myself has been looking for a perfect chicken noodle soup recipe and never been able to find one, until now. I tried yours at home, and granted, it was time consuming, but OH EM GEE, the ending result was absolutely breathe taking. My husband and I thank you very much. Keep up the good work.

    If you're going to braise it for 3 hours, might as well just throw in some bones/ thigh/ drumsticks and do a stock with water. It's what i did last night and it tasted fabulous.

    I've used this recipe a few times now and every single time I serve it I get so many compliments! Roasting the chicken beforehand is a MUST! I would have never thought to do it if it wasn't for this video. It's the perfect hearty, warming soup for a cold or rainy day (we often get both here in London haha). It's delicious and full of flavour! And if you can, definitely add the wine! Thanks Laura :)

    I've watched almost all the chicken noodle soup recipes on UA-cam and you to me have the best one. All the others either didn't season properly or did things backwards lol. This recipe was so yummy!

    Is it just me or when I buy low sodium broth, I always end up adding salt to it anyways because it tastes so bland

    You can cook the noodles with plain water to the right point and rinse it through cool water from to keep them from overcooking (add a little bit cooking oil to prevent sticking when drying). To serve, preheat cooked noodles in microwave (if you want to have a really hot soup) and pour hot soup over them. That's the way asian people cook noodle soup at home.

    Quick tip for a classic recipe: Try it with orzo instead of egg noodles, and add about 1/4 cup of rice. Awesomer!

    Hi Laura. I was a little late in finding this recipe. I made it yesterday with a few changes. I put my roasted chicken in my pressure cooker with sauteed veggies and cooked for about 5 minutes. It was so good with ditalini pasta
    and a sprinkle of parmesan cheese of course.

    I tried this recipe and it was just divine! I used a pre-cooked rotisserie chicken and used water instead of chicken stock. I ate two big bowlfuls (it was so good) and also put some away in the freezer. Am having one more bowl tonight for dinner. Two thumbs up for Laura!

    Used a small rotisserie chicken and swapped orzo for the egg noodles. Also added some fresh lemon, BEST SOUP IVE EVER HAD! & this was my first time making chicken noodle, thank you Laura 💕

    That looks awesome... I do my chicken soup almost the same way. I like to add a little bit of liquid smoke and some Chipotle Tabasco Sauce just to give it a little bit of a smokey flavour. Love all your recipes...

    I LOVE Lura....and ALMOST all of her recipes....but this one i just dont get. If you are going through all of the trouble and expense of using a whole chicken.....Why the heck would you use yucky make believe broth from a container??? if simmering a whole chicken for 3 effin hours dont get you a great broth........and not using the chicken skin is just plain sinful Who dont love chicken skin? But you are still beautiful Laura!

    My whole family loved this recipe Laura, thank you for sharing. I have to confess though that I have improvised a little, I used a store bought roasted chicken and didn't have pasta on hand so I used rice noodles. The falvours where still great, I will try the recipe from scratch when I have more time.

    I am currently cooking this, it smells so delicious, I couldn't find poultry season so I got herbs which has almost everything you described but i'm sure it will be delicious, and I didn't use wine as I can never find a decent cooking wine I like. This is recipe 8 or 9 that I have made from your channel and I have loved every single one! yum yum!

      Her website has the recipe, go to either episodes or recipes and look for it, its there. It isn't that hard to take a second to look for the recipe. I am sorry if I sounded rude but I felt the need to defend Laura after she works so hard and everyone expects the written recipe to be handed to them on a platter.

      Peace Serves 6 to 8
      Prep time: 10 mins
      Cook time: 4 hrs
      Ingredients:
      1 (3 ½ lb) Whole Chicken, rinsed under cold water and dried (make sure the giblets bag is removed)
      3 Tbsp of Olive Oil
      1 Large Yellow Onion, chopped
      3 Large Carrots, peeled and chopped
      3 Stalks of Celery, chopped
      2 Cloves of Garlic, minced
      12 cups of Chicken Stock
      1 Tbsp of Poultry Seasoning
      ¼ cup of Chopped Parsley
      ¾ cup of White Wine
      2 ½ cups of Wide Egg Noodles
      1 4”Piece of Fresh Rosemary
      Salt and Pepper, to taste
      Process,1) Heat the oven to 425 degrees. Drizzle a tiny bit of oil in the bottom of a roasting pan, add the chicken to the roasting pan, drizzle a little oil over the top, season with salt and pepper and place the piece of rosemary in the cavity.
      2) Roast the chicken for 1 1/2 hours.
      3) In a large heavy duty pot, add 2 Tbsp of the oil and let it preheat over medium heat, add the onions, celery and carrots and season lightly with salt and pepper. Cook the veggies until softened, about 5 to 7 minutes. Add the garlic and cook for an additional 30 seconds.
      4) Add the poultry seasoning and cook it stirring constantly for about 10 seconds, add the wine and let it reduce for just a few seconds.
      5) Add the roasted chicken to the pot with the veggies, cover with the chicken stock and sprinkle in the parsley, bring to a boil and cover the pot partially and lower the heat to low.
      6) Allow the soup to cook for 3 ½ hours.
      7) Remove the chicken onto a plate and let it cool slightly. Meanwhile, with a ladle, skim off as much of the fat as possible from the soup base and discard.
      8) Once the chicken is cooled enough to handle, discard the skin and shred all the meat.
      9) Add the meat to the soup base, increase the heat to medium high and bring the soup to a rolling boil.
      10) Add the noodles and cook them according to packaged instructions. Taste for seasoning and adjust if necessary.
      Serve immediately!

    Great recipe Laura, I made this last night and the family loved it! Used just a regular super market chicken and it worked out fine. I wouldn't change a thing except leaving the rosemary sprig out, as there is rosemary already in the poultry seasoning.

    this is now my go to recipe for chicken noodle soup. the first time i made it i only had chicken thighs but it still turned out great. laura is right, roasting the chicken first makes a HUGE difference.

    Chicken broth in a box?? Looks like Swanson brand, probably with preservatives. C'mon Laura!!! Make your own broth.

    We make chicken/turkey noodle soup out of leftover roast chicken and it really makes a world of a difference! We just shred left overs and it's great.

    I'm making this right now but I didn't have poultry seasoning and so I used Bragg's seasoning. The chicken should be done boiling in about 30 mins and it looks and smells so good. I can't wait til it's done. thank you

    I made this tonight. Delicious. I didn't even simmer it for 3 hours. i brought up to boil for a few minutes then turned it off and left the house for a couple of hours. Came back, deboned chicken brought back up to boil with pasta and done.

    Made this today. Will never go back to cooking chicken soup the old way. The wine comes through so well. I don't think I have poultry seasoning where I leave so i just used tyme, some nut Meg, and saltnpeper. Plus no celery couse i hate it. Really is worth trying. Thanks Laura!

    I love chicken noodle soup! It's one of my favorite meals to cook and eat! It may cook for so many hours, but it was worth it! A whole chicken? THAT'S A LOT OF SHREDDING! The shredding is my favorite part. The chicken is kind of moist!! It looks delicious at 8:43!

    I made this the other day and tasted really good. I didn't use the wine since I didn't have any nor the rosemary. I had trouble at the end with I put in the pasta because a big portion of the chicken broth evaporated. I try solving it by adding water, I am not sure if it took out some flavor. I think next time I would make the pasta in a different bowl or have my chicken broth in hand. Though this was a delicious chicken noodle soup!!! Everyone complimented me on it
