using a rotisserie chicken is a great shortcut!!! :)
I was told years ago to skim the grease from soup, take some paper towel and lay a sheet on top of the soup and it absorbs the grease. It works wonderful
When you skim it using a spoon or ladle, your removing a lot of the soup but the paper towel absorbs only the grease. I use this method all the time.
Really? I have had so much trouble trying to skim the fat but I am going to try your method. Wow, Never heard of this. Thanks for the tip
Paper towels absorb water when you’re cleaning up, etc so I don’t see how that can be true. You’re definitely absorbing the broth at the same time. I believe the thinking is the grease layer is on top of the soup so you’re absorbing that but you can see in the video it collects to the outside and the broth is in the middle.
Have made this several times. You don't need this much chicken for the soup. Just bake up some thighs or breasts and take it off the bone. Follow the recipe other than that...it is really delicious! Thank you Laura!!
Great idea!
I would make Chicken Salad sandwich with the leftover
Yes the thighs are a very good idea. I will double up because to me the abundance of chicken in this recipe has me motivated. Just not a whole chicken
Peggy Riley I agree. Maybe a package of boneless thighs and a breast is enough chicken. However, the whole roasted chicken looked so yummy, I want to do one.
😜
Too much chicken?!!?? Its the first word in the name of the soup!! Hahaha!!
Made this for my wife this week when she was sick. She loved it. Thanks!
Awwwww ❤ bless u both. Love it
Awww your so sweet with your wife 😍
I'd say you are a keepah !
Fantastic demonstration, this is definitely a whole new spin on Chicken Noodle Soup.. I'm giving the recipe 5 stars... Great job Laura Vitale....
I just made this with Sams Club rotisserie chicken. It is delicious!!!
Making it now 😊 I actually first made this for my husband when he was sick, and he's requested it frequently ever since.
I also laughed when she had the thyme and she said to stick it up the butt! Lol! Most cooks try to use fancy cooking terms. Gotta love her!
Hi Laura, thank you very much for this recipe. I myself has been looking for a perfect chicken noodle soup recipe and never been able to find one, until now. I tried yours at home, and granted, it was time consuming, but OH EM GEE, the ending result was absolutely breathe taking. My husband and I thank you very much. Keep up the good work.
If you're going to braise it for 3 hours, might as well just throw in some bones/ thigh/ drumsticks and do a stock with water. It's what i did last night and it tasted fabulous.
I had the same reaction - Laura I love your videos but I find it odd that you would waste a whole chicken carcass rather than use it to make your own stock
So I’m not going to lie- I was pressed for time and used a $5 rotisserie chicken from Sam’s and the recipe still came out great!!!! Thank you Laura ;-)
And ur chicken didn't come out dry after 4 hours of cooking?
I've used this recipe a few times now and every single time I serve it I get so many compliments! Roasting the chicken beforehand is a MUST! I would have never thought to do it if it wasn't for this video. It's the perfect hearty, warming soup for a cold or rainy day (we often get both here in London haha). It's delicious and full of flavour! And if you can, definitely add the wine! Thanks Laura :)
I wanted to make a homemade chicken noodle soup and bought a whole chicken and was like "Laura Vitale has my back" 😂 and this is exactly how I thought I would make it 👍 Thank you for justifying my ways! Also, love that you serve it up in a Laura Vitale bowl like a boss!!
What a comfort dish! It's snowing outside here today, Sunday afternoon, perfect for making this soup! The house smells amazing and the long cooking time is no problem. It's going to be wonderful! Thank you!
I've watched almost all the chicken noodle soup recipes on UA-cam and you to me have the best one. All the others either didn't season properly or did things backwards lol. This recipe was so yummy!
i will definitely have this one! been doing a lot of your pasta dishes, as you say it, it's DIVINE! thank you laura - Nathan (Philippines)
Another amazing video. Thank you so much for explaining everything so simply! You are such an inspiration! My family and kitchen thank you!
Hey Lauren. I’ve been using your recipes and my family absolutely loves them. They think I should open up a restaurant 😂 they say my cooking is the absolute best they’ve ever had. Thanks so much for your help. Made your beef stew yesterday unbelievable 🙏
I AM OBSESSED WITH WATCHING UR VIDS LOL. ur so good at cooking
Oh this looks so delicious, it brings back good memories. of mom in the kitchen cooking Chicken and noodles. She even made her noodles. A beautiful thing! Thanks! Yum!
Omg Laura! I made this soup today and you are soooo right! Roasting the chicken have the soup so much flavor!
I'm not a good cook at all but your videos are giving me alot of inspiration im excited to get started thanks Laura :)
I love the soup I made it for my kids and they loved it I am never going to store bought soup again thanks laura
I realize this is an old video, but I used this recipe for the first time and the chicken soup came out delicious. Thank you Laura. I love your recipes.
"Take the rosemary and stick it up its butt" HAHAHAHAHAH IM DYING
Laura,I love Love love your kitchen. In fact,I think it's so gr8 that the 2 plastic flower vases you have do it complete injustice.A vase of fresh flowers is what your kitchen deserves! Thumbs up If anyone else agrees! :-)
when I make this ill buy a whole roasted chicken from Walmart $7 and do the rest pretty much the same.
What a great idea! I'll be stealing it :D
I've always done this recipe using a rotisserie chicken from Costco too!! The end product tastes simply divine
when i heard about roasting the chicken i thougth the same thing, just buy it at the store
rodbob11 true
I do the same just buy chicken from Costco
I love watching you cook. It inspires me to try to cook new things for my husband! 😊
Is it just me or when I buy low sodium broth, I always end up adding salt to it anyways because it tastes so bland
It's so that you can control the amount of salt you put in your dish.
You can cook the noodles with plain water to the right point and rinse it through cool water from to keep them from overcooking (add a little bit cooking oil to prevent sticking when drying). To serve, preheat cooked noodles in microwave (if you want to have a really hot soup) and pour hot soup over them. That's the way asian people cook noodle soup at home.
Quick tip for a classic recipe: Try it with orzo instead of egg noodles, and add about 1/4 cup of rice. Awesomer!
Tom Vitolo I like ditalini in mine 😊
Yes!! Roasting the chicken gave it the best flavor!!! I'm so impressed with you. My hubby watched your show and now he's hooked too!
I died when you stuck the rosemary up the chickens butt. Great video, :)
I followed your recipe it was wonderful. By far the best I've ever tasted. Thank you for sharing Laura!
I noticed Laura doesn't respond to comments and reviewing some of these comments really explains why. She most likely doesn't even read the comments. I don't blame her.
Beauty is in the eye of the beholder. An so is taste. If people may not like her face or voice or whatever they dislike it
I'm still telling friends about your recipe, it's THAT good!
Since I found you on UA-cam you are becoming my favorite chef. Thanks so much!
Excellent recipe, I used the chicken drippings/ fat to fry my veggies like this recipe it was amazing!
Hi Laura. I was a little late in finding this recipe. I made it yesterday with a few changes. I put my roasted chicken in my pressure cooker with sauteed veggies and cooked for about 5 minutes. It was so good with ditalini pasta
and a sprinkle of parmesan cheese of course.
I bet her husbands like, “ok end the video so I can eat too” lol. I’m going to try this! Thank you.
I tried this recipe and it was just divine! I used a pre-cooked rotisserie chicken and used water instead of chicken stock. I ate two big bowlfuls (it was so good) and also put some away in the freezer. Am having one more bowl tonight for dinner. Two thumbs up for Laura!
it is not easy to find this recipe on your website and it would help to have the measurements listed and ingredients
Laura, I have made this soup of yours ten times, and if I have not thanked you yet. ( which I think I did) Let me say Thanks. Before I make chicken soup, I always watch this video first. You are a gem. Smooches
...
why is this in my recommended in 2019? maybe it's because i clicked on too many chicken noodle soup videos since j-hope releases the song haha
@EC C theres a song called chicken noodle soup
I can't escape y'all even when I'm watching cooking videos 💜. It's incredible, we're truly everywhere
I just made it today - absolutely awesome! Completely different taste than how I made it all these years. A total transformation of the soup recipe. Thank you Laura! 5 stars for sure!!!!
how is this chicken so big???? americans are crazy! over here in switzerland a chicken is not even half that size. this looks like a turkey to me haha
steroids
yikes, I thought she uses organic meat and produce
+Alessandra Musterfrau everything over here is big lol. when i visit other parts of the world and see how bony the chicken is, i ask the locals have they been starved? lol
+Alessandra Musterfrau she does! No steroids at all! LIES! There are many big chickens in America
+Alessandra Musterfrau I agree1 I'm in Germany and the chicken 'hähnchen' is also smaller, much smaller
Laura I made this chicken noodle soup today. I followed the recipe exactly. It is absolutely so delicious. My whole family loved it. It is a winner in our house.
Am I the only one who wants to smell the soup through the camera?
Nope I Im with you
ME! Lol
I've tried Nonna's stuffed calamari, chicken and dumplings, Nonna's apple cake, and Wow what FANTASTIC RECIPES! Love them can't wait to try more.
this video is mouth watering
Used a small rotisserie chicken and swapped orzo for the egg noodles. Also added some fresh lemon, BEST SOUP IVE EVER HAD! & this was my first time making chicken noodle, thank you Laura 💕
i used a store bought roasted chicken. it's not any more expensive and works just the same. i make my brother from the bones.
+Elsbeth Steele You made your brother??? How about you made your broth from the bones....spelling must be a lost art!
LOL. She must have commented using her phone. I have made similar mistakes before. :-)
+Bee Free yes my brother. Exactly. You must be a scientist eh?
@@beefree7114 OMG Another uptight neurotic spelling police type!....Do you get off at pointing out other peoples typos ????? You should try to get a life....get a puppy or a hobby .....OR SOMETHING! Oh by the way..... GOODBUY!!!
It's 21 here today and I will be making this tonight. Thank you I can't wait to try it.
the skiiinnn is the best part ....OMG
That looks awesome... I do my chicken soup almost the same way. I like to add a little bit of liquid smoke and some Chipotle Tabasco Sauce just to give it a little bit of a smokey flavour. Love all your recipes...
Who ever gets to marry this woman is lucky
Alex G She's married to Joe
Most women don’t cook nowadays 😂😩
cook for yourself. women weren't put on this earth to cook for men
I suspect the Camera man.
I love that you always leave the level of seasoning to us.
that might be the most ridiculous thing I've heard in a while..
I ate this like -5 times when I went to NYC last year, fell in love with it, and never got the chance to eat it since :(
Laura and Gordon Ramsey kitchen battle would be awesome
I agree! I think I read the same article.... baking the chicken makes the WORLD OR DIFFERENCE.
I LOVE Lura....and ALMOST all of her recipes....but this one i just dont get. If you are going through all of the trouble and expense of using a whole chicken.....Why the heck would you use yucky make believe broth from a container??? if simmering a whole chicken for 3 effin hours dont get you a great broth........and not using the chicken skin is just plain sinful Who dont love chicken skin? But you are still beautiful Laura!
rbrittne
I don’t like chicken skin
i love that you make it with healthy ingredients for someone like me who watches what i eat and what's in the ingredients
Hey Laura, what kind of white wine do you use?

Am I the only person who puts potatoes in their chicken noodle soup? I don't think I have seen any of the recipes for the soup with them.
Nope i do that too hehe your not the only one:)
jean esannason Oh good. Me and my Mama aren't the only ones then!
:)
No just you Lori. lol
Lori S the potatoes make the soup cloudy and starchy. Sorta similar to what the pasta does. Preference i guess :)
Laura Vitale, you are a living legend!
She's so cute!!
My whole family loved this recipe Laura, thank you for sharing. I have to confess though that I have improvised a little, I used a store bought roasted chicken and didn't have pasta on hand so I used rice noodles. The falvours where still great, I will try the recipe from scratch when I have more time.
That is a huge chicken!
I am currently cooking this, it smells so delicious, I couldn't find poultry season so I got herbs which has almost everything you described but i'm sure it will be delicious, and I didn't use wine as I can never find a decent cooking wine I like. This is recipe 8 or 9 that I have made from your channel and I have loved every single one! yum yum!
Laura where can I find this recipe from? It would be nice if your recipes are at the same place. I went to your site but didn't find the recipe? Thanks
Her website has the recipe, go to either episodes or recipes and look for it, its there. It isn't that hard to take a second to look for the recipe. I am sorry if I sounded rude but I felt the need to defend Laura after she works so hard and everyone expects the written recipe to be handed to them on a platter.
You were rude in your comment. Especially when Peace didn't even try to insult Laura or anything, so your defense wasn't needed. People need to stop being so rude when someone was simply asking for help.
GonexWithxAxTwinge i am defending anyone! But laura ALWAYS says go to laurainthekitchen.com to get the recipe. People need to listen and use commen sense. You're comment was needed either, that person was just assisting Peace even though there is a link in the description.
Peace Serves 6 to 8
Prep time: 10 mins
Cook time: 4 hrs
Ingredients:
1 (3 ½ lb) Whole Chicken, rinsed under cold water and dried (make sure the giblets bag is removed)
3 Tbsp of Olive Oil
1 Large Yellow Onion, chopped
3 Large Carrots, peeled and chopped
3 Stalks of Celery, chopped
2 Cloves of Garlic, minced
12 cups of Chicken Stock
1 Tbsp of Poultry Seasoning
¼ cup of Chopped Parsley
¾ cup of White Wine
2 ½ cups of Wide Egg Noodles
1 4”Piece of Fresh Rosemary
Salt and Pepper, to taste
Process,1) Heat the oven to 425 degrees. Drizzle a tiny bit of oil in the bottom of a roasting pan, add the chicken to the roasting pan, drizzle a little oil over the top, season with salt and pepper and place the piece of rosemary in the cavity.
2) Roast the chicken for 1 1/2 hours.
3) In a large heavy duty pot, add 2 Tbsp of the oil and let it preheat over medium heat, add the onions, celery and carrots and season lightly with salt and pepper. Cook the veggies until softened, about 5 to 7 minutes. Add the garlic and cook for an additional 30 seconds.
4) Add the poultry seasoning and cook it stirring constantly for about 10 seconds, add the wine and let it reduce for just a few seconds.
5) Add the roasted chicken to the pot with the veggies, cover with the chicken stock and sprinkle in the parsley, bring to a boil and cover the pot partially and lower the heat to low.
6) Allow the soup to cook for 3 ½ hours.
7) Remove the chicken onto a plate and let it cool slightly. Meanwhile, with a ladle, skim off as much of the fat as possible from the soup base and discard.
8) Once the chicken is cooled enough to handle, discard the skin and shred all the meat.
9) Add the meat to the soup base, increase the heat to medium high and bring the soup to a rolling boil.
10) Add the noodles and cook them according to packaged instructions. Taste for seasoning and adjust if necessary.
Serve immediately!

Great recipe Laura, I made this last night and the family loved it! Used just a regular super market chicken and it worked out fine. I wouldn't change a thing except leaving the rosemary sprig out, as there is rosemary already in the poultry seasoning.
I'm sick i need somebody to make me this please 😔
this is now my go to recipe for chicken noodle soup. the first time i made it i only had chicken thighs but it still turned out great. laura is right, roasting the chicken first makes a HUGE difference.
Chicken broth in a box?? Looks like Swanson brand, probably with preservatives. C'mon Laura!!! Make your own broth.
c
marie kr So what you're saying is that if "nobody" has time to, then a "somebody" must have enough time to.
marie kr I don't eat at those fast food pig joints. Try guessing again.
Cassidy Armstrong That's probably what anything you cook would taste like.
I don't cook, my dogs chewed my arms off.
We make chicken/turkey noodle soup out of leftover roast chicken and it really makes a world of a difference! We just shred left overs and it's great.
I'll use a roasted chick from the market...less time you can get to the soup right away
CLARA3952 koss like the BJs kind?
Laura, I'm eating a bowl of your chicken noodle soup now, and it is delicious, roasting the chicken made all the difference. Thank you.
anyone else died a little inside when she said dont use the skin of the chicken then she proceeded to rip it? D:
What a waste of chicken wouldn't it be better to only use just chicken breasts instead of a whole chicken ....
me me! the skin is my favorite part of a chicken.
+Fluffy288 idk, boiled chicken skin isn't too tasty.
TamashiPrints ikr
TamashiPrints grillRd chicken skin is my favorite. She could feed them to a dog.
"life changing" chicken noodle soup ---- chicken roasting NOW, will have your soup tonight! Thank you for making cooking fun!
If only you could cut the talking a little bit...
If only you cut your comment a little..
I'm making this right now but I didn't have poultry seasoning and so I used Bragg's seasoning. The chicken should be done boiling in about 30 mins and it looks and smells so good. I can't wait til it's done. thank you
oh my god, my grandma makes this chicken soup the exact same way! i eat it whenever i'm sick and i'm instantly better hahah n_n
I made this tonight. Delicious. I didn't even simmer it for 3 hours. i brought up to boil for a few minutes then turned it off and left the house for a couple of hours. Came back, deboned chicken brought back up to boil with pasta and done.
This is recipe is a life saver during cold winter months. Thank you!!!
Mmm...... looks so good! gotta try this! And I love how your so honest with your viewers.
It's amazing - roasting the chicken makes all the difference thank you so much for sharing!
Made this today. Will never go back to cooking chicken soup the old way. The wine comes through so well. I don't think I have poultry seasoning where I leave so i just used tyme, some nut Meg, and saltnpeper. Plus no celery couse i hate it. Really is worth trying. Thanks Laura!
Hi Laura, I have been watching your cooking channel and your vlog channel for months now. And you know what I just noticed. I forgot to subscribe to both of these channels. So one more subscriber coming up. I love the magic you create in your kitchen. I just finished making your homemade chicken noodle soup and it came out great. I only had to make it a little spicier. Thank you for sharing these wonderful recipes. :)
Made this tonight and my family LOVED it, which includes my fussy husband and 2 year old
Hey Laura,I have been trying your recipes and they are delicious. It's so easy and simple.I love how you joke around in your videos!
I love chicken noodle soup! It's one of my favorite meals to cook and eat! It may cook for so many hours, but it was worth it! A whole chicken? THAT'S A LOT OF SHREDDING! The shredding is my favorite part. The chicken is kind of moist!! It looks delicious at 8:43!
Laura, your speech is so great!
I made this the other day and tasted really good. I didn't use the wine since I didn't have any nor the rosemary. I had trouble at the end with I put in the pasta because a big portion of the chicken broth evaporated. I try solving it by adding water, I am not sure if it took out some flavor. I think next time I would make the pasta in a different bowl or have my chicken broth in hand. Though this was a delicious chicken noodle soup!!! Everyone complimented me on it
