  • Today I am making garlic scape salt made from garlic scapes. It makes a beautiful green salt that smells incredible and adds such great flavour to any dish.

    To make the garlic scape salt all you need is 12 scapes and 1/2-3/4 cup of salt. Dry in the oven at 225 degrees for 1 hour, stir every 15 minutes

    When I'd finished a cooking dinner on BBQ, I spread the mixture on a tin foil tray with small holes pricked in the bottom in my charcoal kettle BBQ with some apple wood chips and left overnight, The smoke probably lasted 2 hours and the latent heat as the coals died, dried the mixture to form a dry crust by morning. I broke it up and put into the blender and gave it a few pulses until it was like fine sand. The result, a really good smokey garlic salt.

    Thank you for this! I just cut my scapes yesterday and wasn’t sure what I was going to do with them. I have a nice jar of garlic salt now :)

      @@LivingOffTheLand I will try those too. I used my scales but I can get some more locally. I have a huge garden and every year I try and focus on adding a few more things to preserve.
      I’m not sure what it’s called but I peel and seed my tomato’s and cook them down so it’s thicker. I usually freeze a few jars for recipes but I want to can some this year. Do you know what I’m doing? Lol

      @@kelleyleblanc5025 You can certainly peel and seed tomatoes for freezing. It will make them thicker. You are most likely making a great tomato sauce 😊. If you want to can your tomatoes instead or do a mix of both, it is not recommended to seed your tomatoes if you can them. Removing the liquid (seeds) could have an impact on the acidity. It is ok to peel them. And don`t forget the lemon juice 🙂. I even freeze them whole at time if I am short on time. So many possibilities.

      @@LivingOffTheLand great! I had no idea you couldn’t can without the seeds. I guess it would be easy to strain the sauce prior to using! I love learning new tidbits :). Thank you 😊. I usually freeze a lot of mine whole too! Saves time and it’s easy to peel when they thaw.

    This is my first time using scapes. Great recipe. What temperature would you use in your dehydrator?

      Hi. Thanks for your kind words! Dehydrators are all very different but I would start on a low temperature and keep an eye on it. If it does not seem to be drying well increase the temperature. I hope this helps!

      I forgot to ask, why do you cut the bulbs off of the scapes, and do you use the bulbs for any other recipes?

      @@rhondabaker7611 Oh that is a nice dehydrator! That is a great question to which I have no answer. Not sure why I cut them off to be honest. I guess its because I am not sure how they will blend. I guess you could always try a small test batch with the bulbs to see how it turns out. I usually just compost the bulb. Let me know how it turns out if ever you try leaving them on!

      @@LivingOffTheLand You are such a nice woman. Thank you for your reply. My salt turned out beautifully. I started at 125 on the temperature but felt it was too hot, so I turned it to 105. That's the temperature I use to dehydrate most everything. I watched so many videos and finally found one that said the bulbs can sometimes be woody or fibrous. I did see several people using them, but the bulbs were in the very early stages and small.

      Hi. I don’t see why not. If there is any excess liquid when the thaw try to dry them. Maybe start with a small batch.

    This looks great! Can I use my scape powder with the salt. I already dehydrated all my scapes?

      Hi. Not sure it would stick to the salt. When you blend the scapes they are “wet” then when you combine it all just sticks together. Dry in the oven. You could try a small batch and see how it turns out.

    Did you use the whole scape?

      Hi. I cut off the flower at the tip and use the rest. if you find the base is big and looks woody you can remove a couple inches there.
