One thing the live action did that manga didn’t? Nami and Kaya.
I loved the relationship between kaya and Nami because it further enhances her “rich people are better than me and I’m bitter” kind of dialogue, it fits so well with her backstory of being in a poor family. She wanted so much to have things and so probably develops this envious feeling of anyone who has tons of superficial material things. You realise so easily that Nami saying “it’s not about need with these people it’s about want” is her projecting her own feelings onto Kaya.
So to then realise that Kaya is just a lovely sweet person and actually doesn’t really benefit that much from all this… stuff, she would rather have friends and family. It makes Nami question her own biases and I think ultimately is one of the driving forces behind her asking for help from luffy (finally).
family is something Nami had, except she told her mum and sister that they weren’t her real family, how she probably regrets that makes her come around to Kaya, who also lost her parents.

Two things I haven' seen anyone else mention (both Zoro realted):
The fact that we see Zoro actually kill Mr. 7 also is the perfect quick characterisation for the badass swordsman that he is. Dude doesn't fuck around, and is perfectly willing to murder you. Something I always thought was missing from the anime.... what do they think swords are for.
They name Zoro 1st mate. I cannot express how satisfiying I found this. For years I waited for some kind of "official" recognization of that fact. And now we get it right from the get go. Zoro is the first mate!

Fishmen are banned from Sabody Park (per my understanding, whether the ban is official or culturally imposed). Sabody Park represents discrimination. Arlong Park represents freedom. Both are racist in their own way. However, why would anyone think Arlong and Arlong Park is racist? Sister Nami was a high ranking well-regarded member of Arlong pirates. (What I am trying to say is that racism in ONE PIECE is multi-faceted and is quite educational).

As much as I hate to admit it, the way they laced the original East Blue trio together in Shells Town was actually so genius. It was driven by character, happenstance, and informed the entire series moving forward. Nami infiltrating the Marines for the Grand Line map, Zoro going to the Marines to collect a bounty, and Luffy just happens to be there in the same bar looking to drop Koby off at Marine school. My picks before watching this video:
    *Mihawk's reason for being there:*
It makes way more sense for Mihawk to be curious abt sm1 Garp has an eye on over following some nobody pirate bc he couldn't finish them off in the GL.
    *Sanji's backstory:*
Personally felt the manga told a stronger story and am glad OPLA followed it. Plus the actors (kid/adults) paired well off each other.
    *Zeff-Sanji goodbye:*
This is likely my cultural bias talking bc I just watched Japanese fans talk abt how they missed the dogeza, but I thought the LA's version fit better with their characters.
    *Kaya:*
I felt she had more personality in the LA.
*Naming Merry after a dead Merry:*
A little on the fence abt Merry dying, but I do think naming the boat in honor of the prior and beloved caretaker is more impactful (esp considering what goes on with Usopp abt it in the future).
    *Sanji:*
I love Sanji, but man did Taz make him much more charming in the live.
    *Introducing Garp early:*
Regardless of opinions on how his portrayal should've gone, introducing him early sets up a better foundation to future characters' introductions.
    *Usopp-Kaya:*
We all know they're probably the closest thing to a main cast canon romance, so it's nice they give it to us.
    *Coby-Helmeppo:*
I do like actually seeing how they became friends.
    *Helmeppo:*
This guy was just phenomenal at this role.
    *Early Luffy character development:*
Luffy is my favorite character in the series, but we don't really see a clear character growth of him as a captain until Water 7 (hints of it in Alabasta tho) and I think that makes for better character appeal. I still like him best either way tho.
    *Buggy:*
All of Buggy. I didn't start liking the guy until Impel Down but he's instantly likable here.
    *Morgan's villainy:*
I think downplaying his outright villainy we see in the manga/anime plays better into the logic of how he's still able to be a Marine captain, esp with how no one even tried to report him.
    *Introducing Baroque Works:*
Idk if it'll pay off, but introducing them this early gives good foreshadowing of their importance for later seasons.
*Syrup Village is a shipbuilding village:*
Usopp's mechanical skills make way more sense now.
    *Jacob's storytelling:*
I never bought how certain characters were so into Usopp's tall tales but Jacob actually make listening to them seem as fun as it's supposed to be.

In the manga, Nami had a creed that she would not steal for pirates, whereas in the LA, she stole from Marines and Kaya. I often hear this as a complaint, but I think that it works so well because of A. The stakes involved with why Nami was stealing, and B. It helped build the relationship between Nami and Kaya that served to develop Nami’s character. I had no idea I needed a Nami and Kaya dynamic in my life. Feels wrong to have nami store money at bellemeres grave when nojiko immediately attacks her saying shes got some nerve to show up. Why would Nojiko get tattoos (similar-ish to nami) knowing how poorly received they are(usopp thinking shes thrown her life away when they first meet)? Where does she get the knife to stab herself if she's not trying to stop genzo? Her town didnt feel more realistic to me...they felt like idiots. When i watched the anime i always thought its crazy they'd just believe a 7yo willingly joined her mothers killer for money. Them treating her like a hag so she can leave them without fearing for them is kinda "batman's plans are secret bc he cant endanger the batfamily" but in the LiveAction i genuinely dislike her villagers and i now fully understand how nami canonically has the third highest iq in the east blue as a 17yo thief...

If we're talking about anime rather than manga then the biggest improvement no one seem to mention but IMO is easily the biggest improvement is the pacing. The anime gets worse and worse over time with that but East Blue was still kinda bad. The animation was pretty bad too. So the live action just flows way, way better IMO. It's way more fun most of the time. Makes a HUGE difference.
Setts - pretty much every location in the East Blue is way better and more imaginative than the manga or anime versions. Really underrated improvement.
Another improvement - at least over the anime is the way they incorporate flashbacks. They always found ways to make it seem more natural to show them when they did. The weakest one in that regard was Zoro's flashback showing when he's trapped in a well but it's still better than the anime just having him think back to it when he's on a boat with Luffy, though I don't remember exactly what the manga did.
Sanji's relationship with Jeff and the final goodbye is arguably better. Or at least I enjoyed their interactions here a lot more.

The anime likewise came out before the story had advanced all that far and generally followed Oda's template. The live action has the huge advantage of thousands of episodes of manga to draw from, and foreshadow, and connect, and easter-egg, and even potentially improve or rearrange to suit the difficulties inherent in adaptation. I enjoyed seeing the chemistry develop between all the crew in a very human way, rather than the heightened action way it does in the anime and manga. I also really enjoy the strnger integration of Helmeppo and Coby, and wonder if they will be integrated more in season 2 as part of the Smoker marine b-plot). I think a lot of the changes are also much better for the live action format (rather than necessarily being "better" in an absolute sense). For example, the stylistic changes between the arcs (circus tent Orange town, slasher horror SyrupVillage, a Baratie focused more on downtime and crew dynamics) really kept the season fresh in a way a simple adaptation of "go to new island, defeat arc villain," which I think would have got very old in a LA format. And relatedly, I like that the LA makes East Blue feel like a saga akin to the later sagas of the manga, rather than an anthology series like it does in the original work (probably as a result of Oda not knowing if the series would be cancelled during the first 2-3 years of serialisation).

@ceshmate1953 you need to remember that Garp appearing in Water Seven as Luffy's grandfather? really really sucks in a Hollywood sense. he would feel like a retcon, and even if Oda had actually planned him out the entire time to be Luffy's grandpa? on a lot of levels he needed to be part of all this. He also helps establish the inner conflict of the Marines itself. The idea that there are Marines that are good helps give them some depth and helps give us hope that Koby will NOT become corrupt. Because my first time with the anime I was sure he was going to stop being a cute kid but instead become cynical and hateful. Smokers arc between loguetown and alabasta helped hint that not everything is okay with the Marines, but giving us data on Garp means Koby is in good hands.

with how much more willing they're being about the more outwardly violent scenes like having Zoro straight up cut a guy in half, I wonder if they might have Pell die too. Alabasta is probably gonna be covered by the end of Season 2 so this could come up relatively soon and I feel like it's the kind of change they'll make to give the sacrifice more impact.
The one thing I'm concerned about is how they'll handle Chopper. He just seems like such a hard character to adapt into live action without it looking weird or uncanny. And the same goes for potential future seasons beyond that with Franky and Brook. And in general, as the series goes on it only keeps getting more and more absurd. East Blue was basically easy-mode in terms of adaptating it to live action since as you said, it's the most grounded area of the world. But basically as soon as they step foot in the grand line things start getting super weird and I feel like there's only so much that they could reduce the scale and absurdity of some of the things they find while still keeping the spirit of the show.
That said my fingers are crossed that future seasons turn out as good as this one did.

I appreciate OPLA Luffy's character development. I feel like in the manga Luffy doesn't get any character development outside of a flashback until Drum Island, when he takes Vivi's advice to bow before his attackers. For a good portion of the manga, Luffy feels to me more like a walking amalgamation of tightly held principles in a rubber body, which makes him more of a vehicle to bring out the best in those around him. I do appreciate that approach, and it has served the whole of the story very well. That said, OPLA Luffy feels more grounded and relatable to me because when Zoro is at death's door I feel like he faces some uncertainty, and even if it's just for a moment that's way more internal conflict than the original Luffy faced before reaching the Grand Line.

    - Captain Morgan for fitting as a captain with this increased threat level, even if he was set up by Kuro.
    - It makes sense to me that Buggy could use his powers to dodge or at least lower the impact of blunt attacks as long as he's aware and focused enough to avoid them.
    - Kuro is pretty much the same so no comment. But oh, him actually killing Merry makes him look more competent than his manga counterpart.
    - Sham and Buchi working together well and giving a great fight scene for Zoro 👌
    - Kuroobi needed to be buffed so he can also fulfill the role of Zoro x Hachan fight, and shows how powerful the fishmen are.

-Nami having more physical action scenes this early and being portrayed as a competent fighter that can take several trained marines at once with no help of the crew or fantastic powerful weapons.
-Helmeppo being a joke at first but then becoming an actual character with a developed arc.
-Nami and Zoro actually bonding and having deep interactions that aren't just childish fights.
-Not bringing dead characters back just to end the episode/arc in a feel good and happy tone.
-If we're talking specifically about the anime: not censoring or toning down Zeff's leg scene.
Edit after watching the video: once again we agree in almost everything. Regarding Sanji I don't mind making him less cringe compared to the anime and manga. Portraying him just like the original would KILL the live action on the spot just like the Ed scene in Cowboy Bebop. So I wouldn't call the suave and smooth flirting that Taz convey an improvement (bc I really like the cringe cook making a joke of himself and annoying Nami and Zoro) but it's definitely the best possible way to translate him to live action without making him the low point of the show.

I called Helmeppo “resident sass queen” while binging the series. Having him alongside Koby for the B plot creates effective contrast between them and emphasizes the “born to privilege arrogance vs hard work of common man” thread from the story. Skylar’s version of Sanji’s flirtatiousness/respectful SIMPing for women actually made my heart flutter, although it was more for how they translated it effectively for Western audiences and the cooking things that had smiling. This includes the correct storyline of Zeff eating his own leg to survive being stranded.
Considering how Oda handled present day death in the East Blue saga, I expected Zoro to bring the injured Merry up on his back, have him say goodbye to the ship named for him. Still, since they got his relevant Usopp exposition across, I am not too sad. Having a shipyard at Syrup Village, and the Merry death, sets up the sadness of losing the ship quite well. I love how the Straw Hats’ actors interact off camera but also in lower drama moments on camera… and the added scene with Garp and Zeff made me nostalgic for the past and excited for the future. Bounty introductions also created this feeling, more of this please!
Mihawk and Shanks were both very well done in live action, from their intros to their slight rivalry to seeing Luffy’s first bounty. Everything was there.

Coby is easily the biggest improvement in the live action for me. I loved the way the live action structured him as like the second protagonist for the East Blue saga. We got a better look inside the perspective of the marines. It was way better than not seeing him for 500 episodes. Early One Piece islands weren't really well thought out since Oda was kind of just starting to find his footing in building up the lore. They improved Syrup Village by miles by making it a ship wright town which will tie into Usopp's character arc later on and makes sense why he has basic construction knowledge. Giving Buggy a circus instead of just having his arc in a random village was leagues better too.
Everything that happened in episode 6 of the live action were improvements for me too. Timing Nami's "betrayal" to be done in front of the crew instead of behind the scenes and after Zoro was put in a coma was a great way of giving the crew more impactful emotional turmoil-- and actually made Zoro's declaration of staying with Luffy until the end feel more satisfying and make more sense since the live action put a huge emphasis on the respect Zoro gained for Luffy by not getting in the way of his dream even if it meant his death. Also, Sanji and Zeff. Enough said. I actually like Luffy and Zoro's portrayals in the live action better than I did in the manga/anime in the East Blue saga.

Now that OP has 1000s of chapters of characters, places & lore the l.a can easily reference these to not only make the world feel more immersive early on but also something fun for hardcore OP fans to look out for❤ like the bounty posters of Foxy, Bellamy & Cavendish in Shells Town, the Revolutionary Army symbol & article in the newspaper for Kaya's last scene in the finale & Jinbei being name dropped by Arlong in ep 7,etc. Lol also agree about how awesome the bounty poster reveals were & how each character uniquely interacted w/ them & yeah woulda been cool too if they did the same w/ our main Marines but guess that idea's out since Garp's already revealed. Alvida, Buggy, Kuro, Zeff, Mihawk, Bogard and Helmeppo had their characters treated way better or were elevated more than the initial manga appearances. Villains were improved, just wish Arlong got a little more to justify being the big bad of the season.
Mihawk was great in the manga, but live action really went above and beyond. Like Mihawk went from "Oh, he's cool" to "Wow, he is great! He is Him. And oddly very charismatic."
Personal bonus: Live action made Sanji attractive while pre-timeskip Sanji in the manga is implied handsome but still very generic looking due to the artsyle at the time.
