People from mex, stop complaining, that´s what you get when you go to a mexican restaurant, can´t blame her if that´s not the correct way of preparing them, do you really expect her to go to every part of the world to see how dishes are really made? people adapt dishes depending where they are, i mean, let´s be proud of our mexican food, and that everyone loves it in every part of the world, authentic or not... besides... it´s like us, we put jalapeño, chipotle, tabasco sauce, jugo maggie and lots of different things on pizza, we don´t use real mozzarella because it´s so hard to get... AND STILL CALL IT PIZZA! , you know what i mean?....
I'm here in California and I've NEVER seen a flour tortilla enchilada, not even in grease spoon franchise restaurants like Denny's, Norms, and Hometown Buffet. I wonder if the flour tortilla enchilada is more common in the Midwest or East Coast or both?

That looks so good! my grandma who lives in Mexico makes her enchilada sauce using Ancho and Guajillo chilies. She roast them a little on a griddle then boils them till there soft. Adds some garlic, chicken broth and seasons, mixes it all in a blender and strains it well. It is the best!!!:)
I've made this recipe a few times but I've found that adding roughly chopped peppers and red onions to your filling is amazing. I also add fajita seasoning to my filling and instead of adding the enchilada sauce to the tortilla wraps I add a thin layer of light mayo. So good! My favourite dish ever!

Laura, try making your own sauce, I promise it'll taste so much better. The reason why we dip our tortillas in the sauce, is because when we don't bake them, we fry the tortilla in a little bit of oil, dip in the sauce, stuff with chicken or cheese, depends on what kind of enchiladas you're making, and eat. Much faster, and equally as delicious :) They're are 3 sauces; green, red, and a brown one which is sweet and made with lots of spice.
This is a pretty good version. My grandma usually shallow fries the tortillas in vegetable oil for a few seconds to get them slightly crispy and then she dips them in the sauce, fills them, and bakes. They usually don't come out as soggy. It's an extra step (and extra calories!) but so so good. :)
I make them similar to yours. I like corn tortillas best; and when they are beef enchiladas, I like to add chopped black olives to the filling. My mouth is watering!

I made these last night! So simple and so good!! First time Ive ever used corn tortillas for enchiladas; heating them over the stove was a great idea, much easier to work with, not to mention so much better than flour. This will be going on my dinner rotation.
I made this last night and when my wife says, after the first forkful, "Oh my God", you KNOW it was hit! The only alteration I did was to make the sauce from scratch. Thanks to you and Joe for all of your instructional recipes!
OMG!!! Laura, my 20-year-old son loves Mexican food and I didn't know what to make tonight and he absolutely loved this recipe. Thank you so much it was great!
Looks so yummy!! Since I'm mexican, I'll share with you all non Mexicans the more traditional recipie for green enchiladas which are my personal favorite. You boil about 8-10 medium sized tomatillos which are a green version of a tomato. Within the same pot in which you are boiling the tomatillos, you put in a jalapeño or two or a few serranos or both depending on how spicy you like them. Some times they can turn out not being spicy so it can be a hit or miss, to the boiling water you will add just one regular tomato. Once they become tender, you will get a blender, put in the tomatillos, tomato, chiles and about a cup or half a cup of water. To that you will add one consommé cube, oregano and salt to taste and chop one medium sized onion either white or yellow onion and one to two cloves of garlic. Blend it all so it can come out as smooth as a consistency as possible, do not sift it. When it's completely blended, you put it in a pan with large sides and crank the heat up and make it come to a boil. When it's close to getting up to a boil you get CORN tortillas and you ehat them up a bit to get them softened, you get a separate pan with oil and you fry the tortilla for a couple seconds on each side, don't over do it or it'll burn to a crisp or it will literally become a tortilla chip. Then when you take it out of the oil, Immediately dip it into the already boiled sauce. Don't over dip it or it'll get too sauggy and break. Then when it's in sauce, put it in a plate, get the shredded chicken and put it in and roll it up. Once you get the desired amount per person, you top it with extra sauce if you'd like, cream, queso fresco, lettuce and chopped onion. You can't do a lot at once because they will get too sauggy make them accordingly to how many each person will eat. I know this is really high in calories and cholesterol, don't give me the talk, I'm a med school student, I know what's in it. But once in a blue moon is fine.

Jessica Ingenbrandt We offer fried eggs on top of enchiladas here in New Mexico at every restaurant, its normal :) just like green chile on a cheese burger. All Subway restaurants in NM carry green chile as an option to put it on your sandwich, so delicious. Our green chile was just harvested so every grocery store you go to they are roasting it fresh for you, we just got 60lbs roasted this past weekend, bagged them all and put into the freezer. Here in NM, if you dont have green chile in your freezer, its a sin LOL

Those look amazing!! Can you do a video about utensils, pots, pans, baking items. You know...like the items someone should have in a kitchen. Also go over measurements/sizes of these items to know what is needed or what may be completed pointless. I'm trying to get an idea of the items you always use. Brands that are high quality are really important to me!! Any suggestions you have are great. Hope this doesn't sound too confusing :)
Looks yummy! I rolled enchiladas for years now I just make what I call enchilada casserole and layer it like a lasagna, tastes the same and easier to serve!
Yea, I only use chicken also. But I boil mine then season it and add chile, onion, salt/pepper... Then between the layers I use a mixture of sour creme and creme cheese and lots of Monterey Jack... Now my mouth is watering! Lol
I submerge the tortilla in the sauce and then I pan fry it on each side for about 20 seconds. I fill mine with mexican blend cheese and top it with queso fresco, sour cream(mixed with 2/6 milk, 1/6 may & red onion! SO GOOD!

Just tried these using kidney beans instead of chicken, and green capsicum instead of the chilli. Tastes soooo good!

Really? I cut my tortillas in half and line the bottom with sauce and then use tortillas for the layers between meat and sauce and cheeses.

I made this the other day and it was a big hit. Didn’t use cornstarch; didn’t need it. I also added garlic powder and a chicken bouillon to add more flavor.

I love Mexican food but for some reason I've never had these. I'm definitely trying them this weekend. Looks good Laura.
