I use angel hair pasta also. It does not contain cholesterol the way Ramen does. You did everything almost exactly as I do including the stainless steel pressure cooker. I really enjoy the collagen that comes from duck feet. Also I have figured out how to marinate boiled eggs as well as add seaweed and dry shiitakes. This is great stuff. Thank you
I like your tutorial much better than others you tell us things that others don't say like turn the heat on high the last hour bc that's what gives it the milky white soup. The Tare looks Perfect. Florida Guy here as well. I highly recommend trying Jinya Ramen in Downtown Orlando. I am a big Ramen fan, and have tried the other places in orlando which are good. But Jinya was AMAZING. And uses this Tare in their soups. Even if you are not close to Orlando, it is almost worth the trip. Best ramen I have ever had. (Sorry to promo a place, I usually don't but I figured this would help.)

I know that you're supposed to boil the pork for obscenely long periods of time, but a couple of hours in a regular non-pressurized pot will also work in a pinch! In a pinch, I don't mind losing a TINY BIT of flavor. that's what pork bouillon is for :3

i know and although he washed the bones, when boiled the second time the impurities come in the form of foam to the top and you're supposed to skim it.
+AZ SY you need a rapid boil to emulsify the collagen, fat and meat that break down. Technically you can slow cook overnight then put it into a pot and boil for the last hour of cooking.
A slow cooker set to high works but will take much longer than a pressure cooker, great if you have the patience. There is one possible issue that the broth doesn't boil enough depending on the slow cooker and so does not release enough of the flavor from the pork.

Wow. A what is happening here. Boiling a low gluten dehydrated egg noodle (spaghetti) in baking soda isn't going to change the texture or color of it. A higher ph angel hair is still angel hair . You can just buy pre made ramen noodles. It was heart wrenching watching that hard earned broth fall right off really slick inelastic Italian pasta.
I live in area where the only ramen we have are the cup noodle by Maruchan. This “trick” I learned from seriouseats, just wanted to try it out. It’s not bad if you don’t have access to decent premade ramen.
