  • Though Vietnamese and Cajun cuisines share a lot of common ground, it wasn’t until a community of immigrants and refugees came to New Orleans in the 1970s that the flavors fused. Over time, their descendants have begun to experiment and introduce new ideas, from Cajun crawfish to brisket bánh mì (and even a phở-rrito). We explore the best spots in the city to shop and eat like a true local.

    The Vietnamese is heavy in New Orleans and a lot of people don't know that if you aren't from there. I was born in New Orleans and spent my early childhood down there before me and my family moved in 2002. I lived on the Wet Bank of the city and my best friend for a long time was Vietnamese. He and his family accepted me and my family like their own for a long time. His family were entrepreneur's and they had several business' that they owned in the city. I remember since I moved that more people from his family had purchased houses in my old neighborhood where I use to live. I haven't been back there in a while and this doc about the Vietnamese influence is not surprising to me.

    Would love to explore it in NOLA. Houston has a crazy strong Vietnamese Cajun scene as well, with one of the largest Vietnamese populations in US. There's really nothing like Viet Cajun

    This is just so interesting and satisfying to watch. I basically see an immigrant group doing practically all the "right" things for themselves; maintaining community, mutual aid, adapting to the dominant culture, learning the language while keeping theirs, focus on entrepreneurship, etc.
    It's nice to see the American Dream still work. And it DOES still work, less about race than it is "community". Do you belong to a strong community? Will people help you if you're outta work? Will your neighbors patronize & respect your business if you start one? Nothing is perfect, but it is awesome to watch it work.

    I LOVE the Crawfish from BIG EZ Seafood, it's a positive twist on the traditional Louisiana style Crawfish; When they're in season, I stop by at least once a week. They're located on the Westbank on Lafayette Street in Gretna. Cheers!

    Mr. Crabhouse on the West Bank is a low key great spot owned and operated by Thien Nguyen. I highly reccomend Big EZ Seafood 🌶.

    My sister in law is Vietnam and her and her family are from New Iberia. They really do mix their culinary culture and our Cajun culinary culture very very well.

    My first time in NOLA was in 2020. Never knew about the Vietnamese influence until a native Creole co-worker took me to his favorite, albeit, questionably passable food health inspection-and-reportable, "Cajun" mini-mart/restaurant.
    Having been a smidgen familiar with Creole/Cajun foods, I was blown away with how the Vietnamese spices influenced and enhanced their take on the cuisines!

    I'm a Coonass (slang term for a Cajun) and in a standard sized crawfish pot I get it up to a rolling boil drop in about 1 lb. of butter flavored Crisco, 8 oz. of Zatarain's liquid concentrated shrimp & crab boil seasoning, about 1/2 cup of a seasoning salt I blend (I got the recipe from my dad....he was friends with Tony Chachere from back in the day when my dad was always at oil & gas company cookouts in the 1960s & 1970s and Tony would have people at his hunting/fishing camp on in the Atchafalaya Basin near Opelousas....Tony would always say, "I'm gonna make y'all cry, this is so good"....well, after my dad had gotten his own blend down at a cookout he was doing for his company, Tony came up to him and said, "You made me cry with your blend tonight". He told my dad that he should market it. This was reiterated by countless people over the years. However, it was just always something we had to use, and it was just a hobby for dad. The most we did was give bottles to people for gifts and such, but my dad was a finance/accounting exec in the energy field (oil & gas), and he's a workaholic (he still goes to work at 0500 and according to my mom when we're on the phone, he still doesn't get home until 1730 on average, and he is in his early 80's). We never took family vacations because he never took time off, so needless to say he never ventured into the spice trade, professionally. There are a few restaurants where the exec. chef uses it, as they learned about it, tried it and asked if they could buy some. Dad just gives them as much as they want/need for free. I digress - So, standard size crawfish (seafood) boiling pot, get water to heavy rolling boil, add 1 lb. of butter flavored Crisco, 8 oz. of Zatarain's liquid concentrate shrimp and crab boil seasoning. Then I start my potatoes, at the right time add my corn (and my lil' pièce de résistance is that I also boil artichokes...a little something I picked up from a college buddy of mine years back when I was doing a boil for a friend's law school classmates while I was a bit younger and still doing my undergrad), then I add my crawfish which I've purged in saltwater several times until the water stays clear, when each batch is done I spread it out over a table with paper spread out and then throw on a liberal amount of my dad's seasoning salt, and keep cooking until I have enough to put in coolers to stay warm for more people showing up later and if lucky, still have enough to take home and take the tails off to freeze so I can make some étouffée, jambalaya, or thaw it out and fry some up for Po Boy's if I also have good oysters I can fry (But, I haven't had fried food since my mid twenties, so it's been about 20 years since I've eaten anything fried....but, I love to entertain).
    On topic with the video, I really like the fusion of Cajun and Vietnamese food. I had a girlfriend in college who introduced me to Pho (and I could see the French influence as it was a stew of a bunch of stew, just without a roux for a base, no okra, and instead of rice their are noodles). I also saw the Bánh mì on the menu and saw that it was served on a Crusty French Bread loaf and had a lot more vegetables, but was influenced by the French colonial background of the Vietnamese cuisine. So, I've played around with some fusion dishes and I like to keep in shape and eat healthy so it allows me to have a bit of the guilty pleasure Cajun food I loved as a boy/young man, but is still healthy for my almost middle aged body to enjoy, digest well, and not interfere with my exercise routine, etc.
    Next time I go to New Orleans, maybe I'll go to Carnival this year the week before Lundi Gras & Mardi Gras.

    This community is amazing, pulling themselves up after Hurricane Katrina with no help from the city or state. The city placed a hazardous waste dump right next to them and still they persevered. The mayor of NO at the time refused to go to the celebration of the hurricane recovery. These are the models for the immigrants the US needs and wants.

Vietnamese refugees are like Cuban refugees, they left their counties for political reason, they are anti_communist. They left Vietmam because the U.S pulled out of the war.

    Viet Cajun crawfish was actually created in Houston a while back (since 2002....see Cajun Corner). The Viets in NOLA were hesitant to mess with regular Cajun crawfish recipe, and have only recently been doing the Viet Cajun. Watch the Ugly Delicious episode on Netflix.

    My family is from Acadiana parish in Louisiana. VERY Cajun. These people are, in their outlook, attitude, and spirit, are Cajun as FUCK. This is making me homesick.

    Man this comment section is wild. Sw Louisiana has the best food...NO is good with certain goods, but real Cajun food is west of the Mississippi. We dont put tomatoes in our gumbo.
    Ps...those crawfish dont care if you 'show fear'. They gonna getcha if you let em.

    When I was in New Orleans I ordered a dozen blue crabs. You could starve while picking the tiny slivers of crabmeat out of just one of them. Probably the locals have it down to a science, I grew up in New York state. This video makes me hungry for some Cajun food!

    We were just on vacation in New Orleans. We drove out to two Vietnamese restaurants while we were there to eat. Both were superior!!!!!! Pho Bang and Ba Mien!!!!!!!!!!!!

    Just had some Bahn Mi from Bahn Mi Boys, definitely the best one I had.
