Bagels looked good! I’ve always put baking soda in water as well as honey. Never had any sink before that’s kind of weird. Also I boil one minute on each side , egg wash before putting on seeds or everything bagel.
Yes and No. You cam do both. I do a Tbsp of Baking Soda for a pot like Chelsea has. It just depends on what type of bagels you want. I do add molasses for like my sweeter bagels. ❤.

I have been messing around with them for a few years now trying to find the best version with regard to being from NY, meaning I want a NYC bagel. I won't get in to all the stuff I have read but a consistent theme is 24 hour cold fermentation. If you make another batch and wanted to try it I would be really interested if you felt it made a material difference.
I love the beautiful Gingiber dishtowels, but... I follow you almost everyday and make what you are teaching and my dishtowels are getting so dirty and stained. I am so sad that they are not keeping up with the wonderful colors they were like when I bought them. Any suggestions?
Bagel dough is supposed to be very stiff. I bake mine at 450 for 12-12 minutes. Instead of honey you can use baking soda in the water. Try some with a bit of whole grain flour in the dough.
I found it weird that your bageles didnt float frim the beginning. Mine always float. They looks fabulous. The yeasted recipe I use also said to bake 450f. For 20 min. I had to pull back on temperature and time. I also use a thermometer to test if they are done. 195 to 205 f. ❤
Well… now, I’m hungry & want a bagel ! 🥯. Hoping this spurs me on to try making them again. My one & only bagel attempt years ago was an abysmal failure.

I had bad experience with many olive oil sprays in the past. I just received the same olive oil spray Olivia and I am very excited to start using it.
I wrap them in a towel when they come out of the oven. It helps them finish baking and helps with that chew. They look fantastic!

Baking soda browns but gives the bagels a “pretzelly” flavor. Sugar browns but gives a slightly sweet flavor 😊

you should use a scale to weigh the dough then divide the weight to how many bagels you want.

Mine are too form everyday use, but a good wash with a little stain remover helps brighten them up a little.
One pan at a time also for the cooking all the way through
