Human nature is what I'm told. I've only been doing Muay Thai for a bit but many people will respond with whatever you throw at them. So if you're in the clinch and you throw a right knee, many people will respond with the same thing, which means you can more easily predict what's coming. If you find the person you're sparring/fighting has that habit, it's pretty easy to set them up for whatever you want.

And many times you’ll see repeated jab exchanges because each fighter is set on establishing their game plan/ ruin their opponents first

Just take your head off the center line. Often referred to as a slip jab or "slip n rip"
On the overhand counter? No, you still slip so that their jab misses the head.
