  • This week, we’re bringing you the latest video from a series that we call Home Coffee Brewing with April.
    We believe that innovation in coffee brewing starts at home, and that some of the most special and meaningful interactions with coffee can take place within your own kitchen.
    As we are travelling frequently travelling visiting our international partners, we decided to introduce this format as a way to interact with you on a different level whilst maintaining the frequency of our videos.
    In this video, Tao brews an Ethiopian washed Krume from Duromina, roasted by Livid Coffee Roasters. He utilised a K-Max from 1ZPresso to grind this coffee, and chose the April Plastic Brewer and April Paper Filters as his brewing combination. The water was a repeat for us, a bottled water named Sprinkle with a very low mineral content (9ppm conductivity).
    Tao heated two Fellow Electric Kettles at variable temperatures for his brewing recipe, and used a Kinto Kettle for rinsing, and a Kinto Carafe as a server. He weighed out 12.5g of coffee using his Timemore Black Mirror Scale Plus, and brewed to a total volume of 200g of brew water. The coffee was served in Acme Bobby Mugs, displaying a rich floral aroma with stone-fruit notes.

      I’m usually using Sensory Flavor Cup by Origami. It gives me more sweetness experience.
      And another one, I’m using TY Standard Espresso Cup by 1616/Arita Japan. Cuz I can find clarity fruity taste and juicy mouthfeel.
      Though it’s 3 oz so too small for competition wise, my favorite one.

    Grinder depends on the how much texture from blended flavors or mouthfeel you want to have. Very high clarity burrs tend to have less mouthfeel and texture at the exchange of pronounced acidity and sweetness in the cup

      Are you able to give an example of a burr set that gives very high clarity?

      I have tried different EK43s with some having 98mm SSP HU with others with stock burrs. The 98mm HU burrs are super clean and very sweet and vibrant. I brew the same coffee on a conical hand grinder and the have more body but blended flavors. On competitions, I think a clean cup from your choice of grinder is paramount and not the burrset itself @@coffeewithapril

      @@NexusS4GIceJellyI’m still using stock coffee burr for the ek43, what’s your recommendation burr for overall brew pour over?

      @@Syd7088 Definitely the 98mm HU for the highest clarity with the best balance of mouthfeel for a 98mm burr set. I believe the 98mm ULF can be too thin in the cup that it’s not as enjoyable as the HU. Stock EK is definitely more body than the 98mm HU at a sacrifice of less flavor separation

      @@Syd7088 , @pk8720 is absolutely right. There is a bit of fluctuation from bottle to bottle, but it's actually often under 10 ppm. Which, for the record, we don't normally recommend. However, we have used Sprinkle a lot on our coffees in Bangkok and it seems to work very well.
