Zucchini relish might taste good in a potato salad. Just an idea. I won't pickle eggs again. They're all in the refrigerator but the first 3 were great but now they're too much.
I agree, I don't can meat on the bone because the bone takes up valuable space in the jar. The zucchini relish/chow chow might be good in potato salad. I think a lot of what hinders us from using the products we've canned is just not thinking about different uses for it. I look at some content creators and on one hand I think they're almost crazy with their uses of things they've cooked but on the other hand it's really quite genius. We go to the extent of canning something to preserve it, it also falls on to us to try to not waste that energy/food/time by not eating it in some fashion. I enjoyed your video! But ours is simply because we don't know what to do with them. I know you said, I think, curry. Is there anything else you do with them? I have several jars canned up and have yet to pop the top on any of them. I think it is a mental thing that is keeping us from them. I love canned carrots but discovered a few years ago that I don’t like canned baby carrots. Apparently some are cleaned in a chlorine bath which supposedly evaporates however I find the taste “off”. That might have affected your pickles
Thank you for sharing. I don't can pickled items, but do keep some fermented items in my fridge. Plenty of active biologic nutrients (those get killed in the canning process).
I love that idea. I'm trying to master sourdough baking right now and then my hope is to start learning ferments because I don't much about them right now ! I've had fermented pickles and garlic before and they were amazing! I really appreciate you watching.

Hi Sharon! I actually do both. We love them so we eat them as a side sometimes but mostly I make a chickpea curry or a chicken and chickpea stew with them. I'm working on a video that shows a few ways we use my canned chickpeas. I hope to have it out in the next couple weeks!
I completely agree with you on canning chicken with bones in! it it is a space stealer on your cabinet shelf. I like just popping that can open and making whatever I’m making.
I agree with your will not can again, except for the Mango Jalapeños jelly. I use it like chutney with Indian foods. I’ve never had a dilly carrot but I’m not fond of dilly beans either so . Thanks for a lovely video. Checking out some of your others soon.

I did this with a baked bean recipe I wasn't thrilled with. I hate food waste and I have precious little storage space. So, I focused my attention on them until they were gone.
What a great list! I'm really interested in your low sugar recipes. I've been diagnosed with type 2 diabetes so I'm definitely looking to cut the sugar in my canned goods as much as possible.
Thanks for coming over. I use the recipe on page 398 of the Ball Complete Book of Home Preserving. It is just beef roast that I cook about 2/3 through (but still rare in the center) and I add 1 tsp of salt to my quarts and sometimes 1/2 of garlic. Then I fill my jar with hot beef or bone stock instead of water. I think this adds more flavor to the end product when I thicken the sauce. But you can use hot water if you don't have the beef broth to use. If you use a broth that has salt you may want to cut back some on the salt you add too.
I won't do chicken on the bone again either. Unjarring it takes it off the bone so it's like no bone chicken to use it anyway. Way easier to debonair before canning than picking through a quart of meat to debonair later
@@MyTableofThree another ingredient canner I watch will only can yellow potatoes. She said they can better because they have less starch. Maybe that would help if you wanted to try .

Thanks for sharing your canning likes and dislikes. On the canned potatoes, maybe try with pickle crisp. My fail was greenbeans. I think it was more of a pressure canning error. But I have a ton of jars, and they will go into soups or casseroles. But not as a side dish!

I'll have to keep that in mind about the baby carrots so thanks for the tip. Hopefully the organic once aren't done like that in bleach though.

Pickle crisp works very well for potatoes and carrots. You don't have to pickle them to use pickle crisp. :-)

The best pickled carrots are from fresh picked carrots. Crisp spears. To each their own :)

Agreed on no meat on bones. One year, I had pork chops, cut the inside of my jars, lost several. Chicken doesn't leave enough meat, once cooked down.
