Now if I could do this with video from the game so far all I could think of is just animate moving around with my mouse on a scene without any characters in it but it's been kind of jittery

Hey, glad you like it! Copyright issues with in-game screenshots are for the most part when you re-sell stuff or use them in commercial projects. Game creators always own the screenshots (even if you take them), but they can almost always be used in free videos or when teaching / on blogs (so called fair-use). You can always create fan-art based on screenshots from games...

Hi there, any high end RTX is good, RTX 2060 (laptop) is a little old now, but still ok, go for 3070 or 3080 if you can.
