I didn't have anything but the dark vanilla extract, so I used instead a peppermint extract, which was white, so it had a peppermint taste, everyone enjoyed them, wasn't bad with the gingerbread taste. Thanks for sharing the recipe Tom and Melissa!
I love Gingerbread cookies, bread, coffee.. all things ginger flavored! The cookies were lovely. Reminded me of days gone by..my favorite childhood memory was of sitting with my dad eating ginger snaps out of a brown paper bag and drinking sugared milked down coffee. I felt so grown up. Tim and Melissa I love your videos and have made several items that you have generously uploaded. Your recipe is missing the part about the flour and spices. For those looking for the recipe with those steps included I've made a version of my own. Iced Gingerbread Cookies
1 stick butter, room temperature 3/4 cup sugar 1/4 cup light brown sugar, packed 1 egg, room temperature 1/4 cup dark molasses 2 1/4 cups all-purpose flour 2 teaspoon ginger 1 teaspoon cinnamon 1 teaspoon baking soda 1/8 teaspoon salt
• Preheat oven to 350°. Line cookie sheets with parchment paper. In a separate bowl whisk together flour, ginger, cinnamon, baking soda and salt. Set aside. • Cream the butter, sugar, and light brown sugar in a large bowl. • Mix in the egg and molasses on a medium speed until combined. Be sure to scrape the sides and bottom of the bowl as needed to make sure it is blended well. • Once blended well, slowly scoop in flour mixture. Scrape sides and bottom again and blend until completely combined. • Use a cookie scoop and scoop the dough into approximately 12 cookie dough balls. Flatten the balls slightly. Bake for 11 to 12 minutes or until the cookies seem set in the center. Allow the cookies to cool completely before icing. Royal Icing 2 egg whites 3 cups powdered sugar 1 teaspoon vanilla Beat egg whites until frothy. Add the powdered sugar and vanilla. Beat until the sugar is combined with the egg whites. Pipe or spread onto completely cooled cookies.

I love all the treats you’ve made so far! Here’s a little hint for getting molasses, well any sticky liquid out of the measuring cup: spray the inside of the cup with nonstick spray or rub a little oil in there before you add the molasses or honey or whatever. Can’t wait to see what’s next! We have a cookie baking day coming up in a week!

I’ve never made royal icing, but I also had no idea it’s got raw egg in it, that shocked me! 😳 lol
