Preparing For The Backcountry With Chef Tyler Scott Making Delicious Freeze Dried Meals For Camping

  • Join Chef Tyler Scott and me as we take over my parents kitchen for a few days to make a host of amazing meals for backcountry camping.

    Meals made include:
    Rice Pilaf. We do a batch in the dehydrator and the freeze dryer and compare the results.
    Jambalaya. We recreate a much healthier version of my favorite ration from my days in the army.
    Corned Beef Breakfast Skillet. Tyler spent over a week making corned beef for this one. We combine a pile of other ingredients to make a hearty backcountry breakfast.
    Backwoods Stir Fry. We sear beef sirloin and freeze dry it with some raw peppers, mushroom's and onions to be rehydrated and pan seared in the woods. This one was an experiment that I'll be testing out on my next backcountry trip.

    Here are the recipes for everyone to enjoy!
    Jambalaya (We did X2 the recipe)
    - 1.5lbs Chicken Thighs (skinless + boneless)
    - 1lb Andouille Sausage
    - 1 Sweet Onion
    - 2 Green Pepper
    - 4 ribs of Celery
    - 4 Cloves Garlic
    - 1 tsp Tomato Paste
    - 4 Bay Leaf
    - 2 Sprigs of Thyme
    - 1/2 tsp Cayenne
    - 3 cups of Chicken Stock
    - 1 28oz can of Diced Tomatoes
    - 2 cups of Long Grain Rice
    - 1lb of Peeled and Deveined Shrimp
    Bush Steak "Stirfry" (We did X4 the recipe)
    - 1 12oz NY Striploin
    - 2 Medium Yellow Flesh Potato (Yukon Gold)
    - 1 Sweet Vidalia Onion
    - 1 Sweet Pepper
    - 10oz oyster mushroom
    Rice Pilaf (We did x2 the recipe)
    - 1Tbsp Olive Oil
    - 2 Red Onion
    - 2 Sweet Pepper
    - 4 Cloves of Garlic
    - 4 Bay Leaf
    - 3 Sprigs of Tyhme
    - 2 cups of Long Grain Rice
    - 4 cups Chicken Stock
    Corn Beef Breakfast Skillet (We did X4 the recipe)

    - 1 Jalapeño Pepper (do not rub eyes after taking the seeds out)

    Holy cow! The difference in those rice rehydrating! I'm sitting here packing for a 5 day trip and I just said, I've got to dehydrate some chili before next week

I've never had a real "successful" re-hydrated rice meal, so to see it come out of the freeze dryer like that was crazy! Great to see you guys working together, thanks for sharing!

    Wonderful video Tosh. Tell your mother I love her kitchen!! Absolutely beautiful. I've always heard to add milk to jalapenos irretations etc. Your camping meals should be great!

      This is the recipe we used. We doubled the quantities.
      -1.5lbs chicken thighs (skinless + boneless)
      -1lb andouille sausage
      -1 sweet onion
      -2 green pepper

      -1 tsp tomato paste
      -4 bay leaf
      -2 sprigs of thyme
      -1/2 tsp cayenne
      -3 cups of chicken stock
      -1 28oz can of diced tomatoes
      -2 cups of long grain rice
      -1lb of peeled and deveined shrimp
