You're seeing her call to action on the hero's journey. She put the sword away, didn't want to touch it, saw the price of being a hero and backed away... but the people were still suffering. Other children losing their families. So she faced her fear, took it back up, and became the Void Hunter. The white haired person in the alternate art style is her ancestor, the one who first defeated the fox demon and sealed it in that sword. In game the demon is called "Tailless" and it seems that to seal it, that ancestor severed its tails. That fits with actual mythology about foxes growing more powerful the more tails they have, etc etc... Her father made a scabbard for the sword that allows her to carry it without being influenced by the demon, and since it has a biometric scanner on the hilt, only she can open it.
The "Big Eye" is actually the demon within Miyabi's sword that got bound to her the night her mother died. basically this show that wherever she roams the Demon is watching her. For many years after the death of her mother, she refused to train and was basically mentally broken. But after witnessing so many disasters because of the Hollows the sadness people hit by these disasters were suffering and specially that lost girl that she hugged most likely made her come back to her senses and realize that SHE has a absolute strength that can help these people. Not by helping them directly but by fighting back the Hollows. Funny fact Miyabi before the end of patch 1.4 actually never used the REAL power of the sword, just a part of it was used because her father, to protect her, made a Scabbard using Hollow sealing tech to actually trap the demon within so that Miyabi can only use a small fraction of it's power without exposing herself to danger, but after some time the blade finally found a way "out" of the maze inside the scabbard and started rebelling. Which Wise/Belle (depending on the player choice) reinforced the "maze" within the blade using some Hollow ether tech just to make sure it wouldn't go crazy any time soon, or to at least hold until Miyabi's father check the blade again. Meaning all this time the insane power Miyabi was using was mostly hers. But at the very end of 1.4 storyline she reaches a conclusion with the Demon within the blade which she sworn to it that her mother is the last sacrifice to the blade, that if the blade heed her call she will make sure the blade is not called cursed but will be seen as a legend to future Hoshimi generations, and that she will fight back all calamities that made the demon in the blade suffer (most likely the Hollows). Thst being said i believe the demon in the blade was actually that white nine-tailed fox that slew the 1st white hand and was made into a weapon through some sort of sacrifice to pass on it's power to other wielders of the blade (also through sacrifice). But after seen that whoever is behind the hollows, and whoever is this "creator" can actually use it's power forcefully it simply decided it's better side with Miyabi and fight back the hollows until they track down the ture culprit behind all that
No sure about the relationship with eye entity myself, but it's very Shaman King. It follows her and fights with her. In the first cutscene ever of Miyabi, it goes into the sword at her signal to action, and she unseathes it, destroying dozens of enemies in the blink of an eye. Not sure if it's servant- master, contract, or amicable comradery, but it definitely relates to the power within the sword.
Brief explanation about the sword since I didn't notice if people have said it yet. The heads of the Hoshimi family undergo some ceremony/ritual for them to be able to tap into the power of the sword - the current head would be her father. Miyabi is not bound to the sword in this way. Where the past swordmasters of her family needed to borrow power from the entity contained within the sword to make them fierce warriors, Miyabi is able to wield the sword to terrifying effect through skill alone... However, she is sometimes forced to master the demon/entity whatever it is in her own way, since it doesn't always want to stay quiet.
They did a good job here of using imagery to tell you about the character's feelings without actually telling you. I've gotten too used to the typical hoyoverse character always wearing their heart on their sleeve and never needing to read into things very deeply.
