I have a doubt, you say that the relative movement between the water molecule is viscosity. Then in oil there is less relative movement then it must less viscous right? Why it is More viscous

Particle is a general term used in describing very small quantity. It can mean an atom or an molecule or a piece of something. In the current context, Water particle means water molecule. Similarly Iron particle can be understood as iron atom or piece of iron
