    Vegies I put in my mexican chicken tortilla soup is yellow crook neck squash and zucchini. Then carrots. When soup is about done ( when heating it up on the stove before eating), add a handful of cilantro and half a cup of peas. Then top each bowl with the juice of 1/4 lime wedge and tortilla pieces. I go to the trouble of cutting corn shells and frying in oil. Its our favorite soup.

      Lol I got strong finger tips, can usually do it with water-bath canned tips but not pressure canned lids

    I'm so glad I saw this. I just created a Chicken Taco Soup (Keto) for us and I loved how it turned out and the ingredients are almost same with this one, so I cannot wait to get to making our CTS and canning it. Mine doesnt have beans, carrots or corn (keto) but instead is all the same plus jalepeno pepper, but then after its cooked (in INstant pot) you take out about 1 cup of the soup liquid and add in 4oz of sour cream whisked in and then pour it back into the soup and mix in, then add 1 packet of dry ranch seasoning packet. Then when we serve it, we add shredded pepper jack cheese over top and melts when you mix in. THank you so much!! Can't wait to try those scones too!

    When I make my chicken tortilla soup, I use cilantro , lime and black beans too. I also when I serve it I use some fresh chopped cilantro and lime. Yummmmmy

    Love love the apron 😬 and the soup. One of the things I love about canning. I can so many different things that making a soup or stew all I have to do is go to the pantry except for like onion and celery.

    In case anyone else follows the link to the recipe, or thinks as Rachel has that this recipe is for 17 quarts of soup, it looks like the recipe says it is for 17 quarts, but what they are actually saying is it yields 1 batch of 7 quarts. Which makes sense given the recipe only calls for 6 cups of stock and 6 cups of water. How you'd ever get 17 quarts out of their listed ingredients would be a feat that's for sure! :)

    Use those celery leaves; they have so much flavor! In fact, when I make chicken soup, I harvest the leaves from the celery stalks I'm not using, finely chop them and put them in.

    Your videos are great and always relevant. Going back and watching older vlogs is still educational. BTW.....when you can carrots or green beans what is the texture like? Mushy or firm?

    What I do with my chicken soup is add a fresh salsa called pebre. Recipes can be found on Pinterest and very between the Latin countries. Basically minced cilantro tomato onion olive oil and citrus juice...I prefer lime. I also add water and salt. You serve the soup hot and add this cold salsa at the table like you would add salt to something. Game changer. Guaranteed to blow your mind.

    I've got a decor question for you. Your back splash, is it hard to keep clean? I was thinking of doing that in my kitchen and maybe doing a plain piece of silver behind my stove so it would be easy to clean.

      I think the pressed tile behind the stove is much more forgiving than s flat piece of steel would be. It's not hard to keep cleanest all.

    Have you roasted corn in the husk, removed the kernels then made corn broth?? It is amazing. Oh my word it is the best subtle background flavor and I bet it would be awesome in your Mexican chicken soup!! I got my recipe from Thrifty Chic Housewife on You Tube. She pressure cans it. Another way to make the harvest go deliciously further! 😉 Corn broth sounds sort of odd but I was pleasantly surprised!!

    This looks really yummy! It would be great if you would taste some after it’s canned and let us know how it came out. I canned some regular chicken soup last year and I didn’t really like it, it tasted too canned or something. I liked the plain chicken I canned, so not sure what the difference was, it did have carrots in the soup. I’d love to try this, but I don’t want to waste my time and ingredients if I don’t care for it. The tomatoes might make the difference in taste. I do need to use up some canned tomatoes and frozen broth.

      I made 14 diff soups that I canned. I am allergic to gluten and all dairy. So I cant find soups in the stores. I make a recipe and taste it. If not great i keep adding spices till i get it the way i like. The canning recipes are sometimes bland. There trying to appeal to alot of diff people's taste. So taste taste taste.

    When u go to eat this soup, squeeze half a lime juice per bowl. And make tortilla strips, toast in the oven. And sprinkle on top. It’ll be heaven!

    I was always told you shouldn't be able to take the lid off your canned jars with your fingernails, that is a sign that Isn't a good seal. Yours all seemed that way. Caution!

    Just a tip (which you probably already know?) if your tomatoes are frozen, if you put them in a bowl of water, the skins just slide right off, no burnt fingers :) but maybe you wanted the taste of the 'roasted' tomato....xx

    You need to get a large stock pot. I have a really large one that can hold a quadruple batch of soup.

    I'd add those Peppers to Zippy Sandwich Bags and Freeze, that way when you need some, you just grab a single Bag and not have to take out the entire Big Bag...Jus sayin,Lol

    When at all possible, it is SO MUCH EASIER to de-bone chicken after it has cooled enough out of the oven to handle...I cringed at how much harder and longer u had to work getting all that meat off the bone.
