Roasted Cayenne Hot Sauce

    A basic cayenne hot sauce with roasted peppers and vegetables.
    -1 onion
    -3 cloves garlic
    -a few tomatoes
    -handful of cayenne peppers
    -half cup white vinegar
    -half cup Apple cider vinegar
    -1 cup water
    -table spoon sugar
    -table spoon salt
    -teaspoon black pepper

    I followed your lead and used green cayenne and green pepper with a few jalapenos and onion and garlic. And wowzer turned out great.

    I followed the recipe, but I cooked the vegtables on my charcoal grill. It added a smokey flavor to the finished product. Such a good recipe!

    I have made this hot sauce a few times. I love,love, it. I add honey. I use cayenne cowhorn and I don’t know I don’t know where the habanero. I also add honey. My question is. Does this need to be refrigerated? I have been refrigerating it but does it have to? I do the heat sealed sealer over the screw cap.

    Hey, by cooking the sauce, you distill of the acetic acid, which causes it to spoil sooner. I don't know how much evaporated, but you should check the pH to be sure

      Hi Startshot, appreciate the feedback! We’ve made and tested this sauce a few times and the ph is consistently well within a shelf stable range. It’s also cooked at a very low temperature with water added to prevent too much from evaporating. I agree that it never hurts to check on the ph though, safety first!

      Hey guys! I own a hot sauce and BBQ company and I'm not trying to tell anyone their business so please don't take it that way! I just have a couple of things to toss in here. One, In my experience if you use vinegar you increase your shelf life. Two, I'd ALWAYS recommend bringing a sauce to a quick boil! It kills off any bacterias or nasties that might have gotten by the washing and inspecting process (also halts the fermenting process if you're into that like I am). Lastly, I've found if I bottle while it's still hot (not boiling!) it helps w/the bottles sealing better! Also YES! TEST YOUR PH! Anyway, your sauce looks awesome 👍 and I hope I've been helpful and not come off as a douchbag! Lol Thanks for your time. Have a great day! ✌️
