Okay, so now after sooo many experiments we need some kind of "tier list" or "top x of the best of all time" which we have to try before we die! There is no chance for us to try them all :D

Guga's template for his awesome side dishes:
- diced onions
- diced jalapenos
- grated cheese
- some form of potatoes
- ground beef or diced bacon
- tomato paste and garlic paste if he used beef
- fresh herbs on top
I don't think the editor's get enough credit. I really feel like the production value of each episode gets better. You have an excellent crew.

That MSG packet bag are from different ingredients, not from seaweed. The company said it made from sugar cane, sugar beets, sodium, cassava or corn.
YES! I love this trio. This is the holy triad. Leo for his intelligence, Guga for his culinary luminance, and Angel for his grounded reality. When these 3 ate together, you don't even have to try the recipe. They paint a perfect picture

Speaking of MSG, I recently learned that snacks that use MSG sometimes also contain Disodium Inosinate and Disodium Guanylate to enhance the effect of MSG by 20x-30x stronger (for example, Doritos, Pringles, KFC, Snyders Pretzel Pieces, Hidden Valley Ranch Dressing, etc).
I'm not sure what ratio/blend of MSG, DSI, and DSG is needed, but I'm sure you can find it somewhere. From what I’ve seen, sme people buy a 50/50 premix of DSI and DSG, and then make a custom mix of 97% MSG and 3% DSI/DSG to make an “enhanced MSG mix”.
I was thinking the experiment could be this:
1. Steak + Salt Pepper Garlic (control)
2. Steak + SPG + MSG
3. Steak + SPG + MSG + DSI/DSG
Then maybe you could do a mini test with a potato based side dish to see how it works with and without the MSG+DSI/DSG.
Anyways, I hope you give it a shot!

Hey Guga, I know it may be a similar thing, but in Wales we have what we call laverbread. This is seaweed that is sometimes used as a breakfast supplement. It has glutamates, so might be worth trying as a steak supplement.

Hey Guga been a subcriber for a few years now ive never made a suggestion so this is my first one, Blue cheese dry aged steak experiment. I know it might be horrible but I love blue cheese sauce on steak and I feel with the mold on the cheese it will be a good fermentation experiment plus blue cheese is known for being quite salty, so it would put a nice salt level on the steak. Idea: Which butter is the best?
Get (or make!) butter from several different types of milk, e.g., cow, goat, sheep, maybe even camel if you can. Melt them atop steak and see what tastes the best.
Alternative idea: Yeast extract (no, not marmite/vegemite)
Take baker's yeast and put it in sous vide double-boiler at 50 celsius until it turns into yeast extract, then reduce down into a paste. Take some and make a compound butter with it, and dehydrate the rest into a powder. Cook one steak with the powder in addition to typical seasoning, and treat the other with the yeast compound butter.
I love how Guga does experiments with ingredients around the world. Me being Korean-American I was really happy he was doing stuff with gochujang.
Not related but if y’all are chili makers, try gochujang in your next chili batch.

3:57 Guga, when you slice a steak this way, you can see that your slice is with the grain of the meat. The grain of the meat runs diagonally across the cut you made. Try this modification of the slicing method you do: since the steak is roughly twice as long as it is wide, first cut the steak into shorter pieces so you can see which way the grain of the meat is going, then slice the steak on a bias so your cut is perpendicular to the grain of the meat. See if that doesn't work to improve the mouth feel of even a sous vide Guga steak.
Uncle Guga, you should try use Tapioca as in South East Asia, that's the main ingredients for flakes MSG. Another traditional SEA MSG sources are Belacan (Malaysian) or Terasi (indonesian) - Dried shrimp paste, Cencalok (Malacca, Malaysia) - fermented shrimp, Budu (Kelantan, Malaysia) - fermented anchovies, and Fish Sauce or Nampla (Thailand) - filtered fermented fish.
I have a challenge experiment for you. You say steak doesn’t taste good with sugar. The goal here, is to make a steak taste good with sugar. Good luck 😉

I ask and am trying bc whenever I have left overs and try to reheat, it seems to dry out and become tough. I'm hoping putting it back in the sous vide, it will reheat and keep its moisture and tenderness. I'm not sure if I should sear it again, probably not!

Guga, do you chill your Sous Vide steaks before you sear them? I heard if you do this you can get a good sear without over-cooking the middle too much.
Since I subscribed, my steak game has improved. I'm buying better cuts, better seasoning, and better equipment to make my steaks. I'd love to get a blow torch but I live in an apartment and don't want to burn down the building.

Guga, you should try using Vegeta on your steaks. I don't know if it will be good or not, but it contains MSG, so hopefully it will be nice. It is an all-purpose seasoning and in Slovakia, people use it for almost everything, haha.

msg can be found naturally in a bunch of foods. walnuts, tomatoes, broccoli, corn, potatoes, (and a bunch more) all contains msg naturally.
So it comes from a lot of things, not just that 1 thing.
The best selling MSG for Japanese-Americans in the 1950's was "Ajinomoto". I think this was before "Accent" was sold.
