I have Italian roots, and when I went there to meet my family, I instantly fell in love with their way of life. I'm grateful for my Italian-American roots, but learning the language and being immersed in the Italian culture makes me feel even more appreciative of life. This video is so great and realistic.
Italian here! My suggestion to you is just keep going ahead. Italians usually help and take care of people who want to learn more about our culture and, especially, those who want to live there, being part of that culture. I'm pretty sure you know what i'm talking about and, dont' ever feel uncomfortable about not feeling like part of the community. I am in New York, which is a bit better, maybe because we are taking public transportation and not driving. When I dress up, it helps things go better. If I was wearing athleisure or lounge wear, I would feel self-conscious and maybe wouldn't make eye contact or talk to people. But when I look at least decent, I am more open to things. It just makes my day more pleasant❤

I lived in Ireland for more 10 years, I am Italian. As much as I was 1000% integrated and part of the community, I wasn't Irish. I wasn't Irish because... I am not! :D That can't happen and it's absolutely fine!
I don't think the problem is chicken itself, because if someone comes up with a good chicken sauce recipe it would be good for everyone. What we don't like is seeing a piece of meat on pasta, as if it was a side dish for a steak or a chicken leg. If you use chicken for a sauce and it is seasoning pasta properly, like a chicken Ragù or something, it's not a big deal! We just don't consider pasta a side dish... Well.... There are exceptions as always.... But, take it as a general rule 😅

hello, the explenation is that chiken is not so tasty and we use different kind of meat to prepare souce... although there is a recipe for pasta made with chiken liver. on the other way we do not put cheese on seafood becouse of its strong taste that would cover the natural fragrance of the fish itself. to be' precise we use grated parmesan or pecorino in some seafood recipe weather we are cooking stuffed calamari or any fish rolls or gratinated seafood recipe
Usually we don't cook pasta with chicken because chicken meat tends to dry a lot if compared with fish or red meat. But if you like it obviously nobody will blame you about that!
We can eat pasta and chicken, only not together as a "single dish", but separately, as a first and second course because, for our tastes, chicken and pasta do not go so well together :). Apart from that, it's very different to have, dunno, a sauce that contains chicken by recipe ( which, as you well know, does not exist in Italy anyway) from literally putting a chicken cutlet on top of spaghetti as I have seen done in USA in "Italian American" restaurants! (which have nothing Italian about them XD). In general, it's not our habit mix different dishes in the same plate because apart from the fact that a plate of "pasta with tomato sauce" (for example) must taste of pasta with tomato sauce and not of something else, putting dishes of various kinds and recipes on top of each other in a single plate gives us the idea of feeding a dog with food scraps...è una roba da truzzoni di bassa lega, essù!

In Italy it's not used to mix chicken and pasta because the chicken has a delicate taste and would be overwhelmed by sauces that mix the flavors, which in Italian culture must be respected to have the right balance. Then the meat is used as a condiment but with small cut because it mixes better with the consistency and flavor of the pasta and the pasta is the very real hero of the dish. In the end, meals in Italy are often divided into several courses: pasta first, meat as the second course; adding large cut meat would break this distinction between the courses.
Excellent video as always Shea. 12.08 Unfortunately you're right : There are not many job opportunities in Italy and even if you have a job, it doesnt pay very well which is one of reason why so many young italians still live with their parents even if they're in their 30's and many well educated people go abroad. As much as i love my country ,i hope i can move abroad one day to find better opportunities and life. Im happy that you like living here and i wish you nothing but the best. However, for a native point of view it's kind of "sad" that the main reason why you can enjoy Italy so much is because of your (well deserved) american wage. Enough with this work trend... it's half true (as in all countries of the world, even in the USA if you ask 10 people on the street at least 5 will tell you that they are dissatisfied with their work and underpaid!!... for cons also in Italy there are excellent job opportunities that depend on the company and the working context) and the other half is a catchphrase like many others, from Italians who always complain about everything about their country!!! take a trip abroad and you will understand that there isn't much better out there.... If you find a very well paid job abroad you can be sure that you will NO longer have a social life... but you can also make this work sacrifice in Italy...

@@maxdelpo5578As you said it is a real problem (I repeat it exists in any country in the world even in Dubai!!!) but almost always exaggerated by young people who do not want to sacrifice themselves to work and chase the Sirens of work abroad which is perhaps better paid (but it always depends on what specialization you have, 80% end up being part-time waiters!!! you know what you earn!!!), but with less holidays than in Italy, in case of illness or accident no health coverage ( you pay out of your own pocket!) you have to dedicate many more hours to work, and have no social life (just listen to any foreigner who envies the Italian lifestyle with outings with friends, dinners and aperitifs)... So there is absolutely no need to go abroad to do a few years of sacrifices to save some money!... Coming from someone who worked for 3 years in England (I didn't go to London on purpose) but my the goal was not to make money but to learn the language while maintaining a job, therefore saving my money and enriching myself culturally.
It tastes horrible because white meat is very dry it doesn't absorb sauce well, no meaning in wasting your pasta sauce with white meat...a good pasta blend in its sauce
About pasta, pesto but no chicken: thing is, pasta al pesto is a traditional dish from Liguria, and while you can use pesto with something else, if one eats pasta al pesto we tend to think one should keep it as it is. You may find some purists who will give you pasta al pesto with potatoes and string beans, because that’s how they eat it in Liguria.
I will not be driving any sort of vehicle around here 😂😂 I’m way too scared and even more scared of driving a scooter or Vespa seeing the way people drive. For now I take buses or trains and my boyfriend and friends have cars so I’m all good. 😊

THere's an exception about chicken and pasta, but it's not about "fried" chicken. I's typical of Rome and it's called "Pasta alla Papalina". It takes the name from its very rich ingredients so it's something that in the old days was like "reserved oto the Pope". It includes eggs like Carbonara, but also peas and chicken livers. A variant, still with chicken livers is colled "Pasta alla cova". Anyway they aren't very common, neither in Rome.
Many of my friends complain about low paid job but they do some part time bartender job which as I lived 5 years abroad as student I saw was paid the same if not less in some countries (still in Europe), as I did this kind of job to have something and it was even fun for me, but it is not high paid job elsewhere too and I think it is rather not the kind of job you do for the whole life 😄

@@SheaJordan You should ask someone that knows about Italy, someone with a modicum of local Culture. There is ALWAYS a reason for rules (particularly about food and drinks) and it's usually much more scientific or practical than you could suspect it is. Chicken is NOT very popular in Italy, because is seen as very inferior meat that cannot be made good curing it as in pork meat. In Northern Italy, in particular, chicken is used for soups and chasseur style pot only (and sometimes roasted as fast food). It is not the staple food of any part of the peninsula, anyway, and them birds are traditionally kept as eggs hens, and not eaten until they are old and not so nice at all (good for consomme only). So it's basically impossible to turn chicken into a sauce for pasta, given the absence of natural fats and drips, that would made it taste as cardboard (as usually does). It is considered the epitome of peasant subsistence food, not always available and generally not part of the great cuisine. Industrial farmed chicken has also the infamous reputation of being pure sh..t, not food. As per cutting spaghetti, it's a practice that means you can't eat them like a normal human being, but only making a obscene mess of the plate and of your clothes. Cappuccino it's not only not drank later than early in the morning, but it's not really so popular at all (a bit more now that it used to be, but try to stay for some time in a bar and see what people orders, and you'll realize that apart for tourists, everybody has black espresso coffee). Milk is a peasant subsistence casual food used mostly for cheeses and creams, traditionally. It's very common for Italians not to be able to digest milk at all and this intolerance is made worse if milk is mixed with wine that, until a generation ago, was basically compulsory in form of appetizer drinks (like vermouth) and as the only one drink at lunch and dinner. Ask some gourmet, especially in Bologna there are many of them: it's the sort of people that you can recognize as middle age or older men, wearing bow ties, loafers and usually quite traditional attire, spending looooong time at their table in traditional good restaurants. They are the best source of info on the matter, and enthusiastic about passing their knowledge.

Oggi è coltivato in tutta Italia anche qui in Emilia prché bologna è una città emiliana anche se storicamente il confine dovrebbe essere il fiume Reno in seguito al fatto che Bologna faceva parte dello Stato Pontificio fino al 1859. Questa parte dello stato pontificio, da Bologna fino al mare Adriatico veniva chiamata Romagna ed era una legazione pontificia, in quanto vi era il cardinal legato che oltre alle funzioni tipiche religiose aveva anche la funzione civile di prefetto, mentre per quella militare si appoggiava all'esercito austriaco che era al di là del fiume Pò. Infatti i bolognesi nel 1848 si erano ribellati ed il cardinale aveva chiamato in soccorso gli austriaci che però sono stati sconfitti dai bolognesi, e c'è un monumento che ricorda questa battaglia in piazza 8 agosto alla Montagnola, dove adesso ci sono gli spacciatori di droga h 24. Questa parte del territorio dello stato pontificio, che adesso è ridotto ad una parte del territorio di Roma, comprendeva anche le Marche, l'Abruzzo e naturalmente il Lazio. Si chiama Romagna perché dopo la caduta dell'impero romano d'Occidente a causa delle molteplici presenze di re goti uno di questi chiamato Odoacre, re degli eruli, nel 476 dc depose l'ultimo imperatore romano che era già di stirpe gotica e si chiamava Romolo Augustolo, un ragazzo di 15 anni. Ma rimaneva l'impero romano d'oriente con capitale Costantinopoli in Anatolia. Questo impero durò per altri 1.000 anni. fino alla conquista turca della città. Caduto l'impero romano d'occidente quello d'oriente intraprese quella che viene definita la riconquista. Per prima cosa distrusse i regni vandali che si erano insediati in Nord Africa passando attravrso la Spagna e che avevano compito un sacco di Roma risalendo lungo il Tevere, poi si insediariono in Puglia eappunto in Romagna. Per questo motivo si chiama così, per via della riconquista dei romani d'oriente, detti anche bizantini, per via di una piccola città romana che esisteva prima di Costantinopoli. Ti dicevo che appunto la pasta viene fatta col grano duro che è una varietà di grano piena di proteine vegetali, viene macinata e poi impastata con acqua, poi premuta dentro a delle trafile e quindi essiccata. ma noi tradizionalmente a Bolognanon siamo portatori di questa pasta che è arrivata dal sud con gli immigrati. La nostra tradizione basata sui tortellini, le lasagne e le tagliatelle è basata sulla sfoglia, perché deriva dal nome foglia. Si prende della normale farina bianca e si impasta con le uova. Questo perché la farina bianca non ha delle proteine vegetali, è tutto amido e con l'acqua nonstarebbe assieme. Per qusto motivo la impastiamo con le uova. Poi non viene premuta, ma ridotta ad un foglio col mattarello o con delle macchinette a rullo e manovella. Dopo di che ci fai le tagliatelle o i tortellini o i tortelloni che sono più grandi e si fanno con la ricotta vaccina, un uovo il prezzemolo, sale, il parmigiano e la noce moscata. Vengono bolliti e poi si mangiano scolati e conditi con passta di pomodoro, buro e parmigiano. I tortellini come ripieno hanno 1/3 di lombo di maiale, 1/3 di mortadella 1/3 di prosciutto crudo, un uovo, sale, noce moscata. La pasta e la sfoglia sono due cose diverse. La sfoglia non si può conservare perché si rompe, al limite si può congelare, ma non si mantiene come la pasta dentro un contenitore. Bisogna farla e cucinarla subito o congelarla. Insomma l'Italia è un porto di mare, più mischiati di così non potremmo essere: tedeschi, romani, greci, svedesi, normanni, ma ad un certo punto ci siamo amalgamati in una nazione, anche se di simboli dell'unità nazionale ce ne sono pochini perché il nostro stato ha appena 170 anni, non come la Francia o l'Inghilterra che ne hanno mille. Il problema è che questa funzione di condensazione adesso si è fermata a vantaggi di un'altra che è caldeggiata soprattuto dalla sinistra e in genere da ciò che i sionisti americani hanno escogitato, e cioè la multiculturalità, secondo cui in uno stesso stato dovrebbero convivere separatamente tante culture e religioni diverse, e quesato non va bene, prchédisfa l'unità nazionale nelle sue radici. il pollo con la pasta dipende come lo cucini, in genere vanno molto i piatti unici fuori dai monenti, tipo la domenica e le festività, ma il riso freddo l'hai provato^_^ insalate di riso o con la pasta? il modo di vestirsi dipende anche da regione e città, provincia, uscire in tuta è fattibile, alle volte sotto casa puoi anche andarci in pigiama almeno dalle mie parti ^_^, per il resto il tempo finirai con usare anche parole dialettali ^_^ per quanto siano bolognesi ^^

From what I've seen, Americans put a breaded slice on top of spaghetti. This is not good because to cut the slice you cut the spaghetti into little pieces and then you have to eat it with a spoon. Simple logic, if you have to cut it with a knife, you don't put it on the pasta because then you destroy the pasta, but if the meat is already in pieces like ragù for example, you can use it as a condiment

I have a theory why no chicken + pasta. In the old days, hens were kept for eggs, and by the time they were too old to lay the little meat they have had become very hard, requiring boiling for hours to become edible. Young male chicken was expensive and was eaten only as a special dish, on its own. So, the meat that was usually available was mostly pork or veal/beef (which you got as a byproduct of milk and leather production). Cheap chicken is entirely a product of modern industrial farming. For this reason, chicken did not become traditional with pasta. By the way, here in Veneto, we have a strong tradition of pasta with duck and even pidgeon.
But outside the fact that young male chicken was expensive ecc just count that old italians use to do big portions of ragù even at home with all the family so of course is worthed to use 1 pig/cow instead of killing 20/30 chicken for 1 big ragù, is just that chicken got less meat in general so doing it with chicken wasn't worthed in any way, but on one side we are right becouse i did try chicken and pasta once and it sucks, maybe is becouse im italian so the combination doesn't exist in my brain but really doesn't taste good the chicken is too much salty and everything that you taste is salt and chewing gam consistency
don't worry about feeling italian. We are the result of a LOT of invasions, cultural exchange, conquests, immigration and emigration... if you feel comfortable here, you can feel italian without being an impostor, especially in Bologna, that is notoriously politically oriented to the left (hardcore communism often, but i don't know if for USA people it's a good thing...) SO, don't worry, you will get the hang of it eventually. Also, i suggest, if you have the opportunity, to live here but getting paid for your work somewhere else. Italy is a beautiful place to live but a horrible place to work considering the european standards.

Eh, se vuoi ti spiego una delle ragioni per cui in Italia è considerata un'eresia mangiare la pasta con il pollo :') Devi innanzitutto considerare la natura contadina, 'povera', del 90% dei piatti che costituiscono la cultura culinaria italiana, questo è fondamentale per comprendere. Il pollo, dunque, è sempre stato considerato come un 'privilegio', un pasto a sè, quindi erano considerati una sciocchezza e uno spreco usarlo con la pasta, facendo così un solo pasto con due pasti! Non serve altro, no? Ti è chiaro? I am Italian, and when I speak to Americans I wonder why they move their hands always in the same way, without conveying any meaning. Italians move their hands to convey specific meanings. If your gestures have no meanings, why do you move your hands?
I feel like there is still meaning, maybe not in the sense of Italian hand gestures, but people use their hands for emphasis, to show emotion, etc. Talking without moving your hands at all honestly seems a bit strange to me 😂
You have a point, you didn't grow up here and prolly you will never feel 100 % Italian But....Italy is changing in a fast way ! There is a growing number of "new Italians" from eastern Europe, china, you name it ! Their kids were born and raised here but aren't seen as 100 % Italian by many locals, either. One day these new Italians will be so many, their oddity will vanish and they will be seen as locals finally, that will be your case too, no doubt about it, in a nutshell....it's just a matter of time.

I am Italian-born Russian, and let me tell you although I wasn't born or raised in Russia I belong to that land, defended that land and ready to do anything for her, so whether people ask me for my nationality I quickly answer that I am Russian, don't get me wrong I know I am not ethnically, but ffs we are in 2024 and still think like primates, nationality is in my honest opinion a matter of mind and actions, not race... our genes are so mixed anyway that nobody can be from somewhere without also having the DNA of someone in the other part of the globe, so to me if you feel to belong to Italy enough for you to consider yourself part of that land and culture, and you'd be ready to defend it, then you are Italian end of the story, of course, if you consider yourself Italian you can't ever feel to belong to somewhere else, that'd be weird otherwise, but surely you can be ethnically from "X" but being nationally from "Y", furthermore Italy has so many differences between ethnic Italians that' it would be almost impossible to consider one more Italian then someone else, that also fits well Russia, Inidia, the US, the UK, Germany, France, Spain, etc... Isn't it time for us to give more credit to what and where a person feels to belong to, and not where it was born or their parents were ? That being said, I am sorry for such a long comment, the thing is, it boils my blood whenever I get into this argument because it is so close to my soul, that I know what racism means and what the feeling of not belonging anywhere looks like, not to mention finally finding home, fitting in a place and culture...

Hi, sweetheart 😊😻 (i'm italian) by the way, it's definitely true that noone should put cheese on seafood (who tf would put cheese on seafood? At this point let's put nutella on seafood too); but although it's a bit rarer for me it's quite normal to ask for a cappuccino even at 17:00 (not later than 17 though. Bars open at 5:00 o'clock and close at around 19:00 o'clock. Cappuccino is meant to be breakfast. Who would do breakfast at 17/18 o'clock 👀). Even chicken on pasta, it's not that great but it's a cholesterolless alternative to red meats like pig's and steer's meat!
I have Italian roots, and when I went there to meet my family, I instantly fell in love with their way of life. I'm grateful for my Italian-American roots, but learning the language and being immersed in the Italian culture makes me feel even more appreciative of life. This video is so great and realistic.

Grazie per il video. I like the Italian way of dressing up. The sloppy clothes are out of hand in the U.S.! I am in New York, which is a bit better, maybe because we are taking public transportation and not driving. When I dress up, it helps things go better. If I was wearing athleisure or lounge wear, I would feel self-conscious and maybe wouldn't make eye contact or talk to people. But when I look at least decent, I am more open to things. It just makes my day more pleasant❤

I don't think the problem is chicken itself, because if someone comes up with a good chicken sauce recipe it would be good for everyone. What we don't like is seeing a piece of meat on pasta, as if it was a side dish for a steak or a chicken leg. If you use chicken for a sauce and it is seasoning pasta properly, like a chicken Ragù or something, it's not a big deal! We just don't consider pasta a side dish... Well.... There are exceptions as always.... But, take it as a general rule 😅

hello, the explenation is that chiken is not so tasty and we use different kind of meat to prepare souce... although there is a recipe for pasta made with chiken liver. on the other way we do not put cheese on seafood becouse of its strong taste that would cover the natural fragrance of the fish itself. to be' precise we use grated parmesan or pecorino in some seafood recipe weather we are cooking stuffed calamari or any fish

Usually we don't cook pasta with chicken because chicken meat tends to dry a lot if compared with fish or red meat. But if you like it obviously nobody will blame you about that!
We can eat pasta and chicken, only not together as a "single dish", but separately, as a first and second course because, for our tastes, chicken and pasta do not go so well together :). Apart from that, it's very different to have, dunno, a sauce that contains chicken by recipe ( which, as you well know, does not exist in Italy anyway) from literally putting a chicken cutlet on top of spaghetti as I have seen done in USA in "Italian American" restaurants! (which have nothing Italian about them XD). In general, it's not our habit mix different dishes in the same plate because apart from the fact that a plate of "pasta with tomato sauce" (for example) must taste of pasta with tomato sauce and not of something else, putting dishes of various kinds and recipes on top of each other in a single plate gives us the idea of feeding a dog with food scraps...è una roba da truzzoni di bassa lega, essù!

In Italy it's not used to mix chicken and pasta because the chicken has a delicate taste and would be overwhelmed by sauces that mix the flavors, which in Italian culture must be respected to have the right balance. Then the meat is used as a condiment but with small cut because it mixes better with the consistency and flavor of the pasta and the pasta is the very real hero of the dish. In the end, meals in Italy are often divided into several courses: pasta first, meat as the second course; adding large cut meat would break this distinction between the courses.
And to make a softer version of soccia (shocha) you can also say shòrbole !
Excellent video as always Shea. 12.08 Unfortunately you're right : There are not many job opportunities in Italy and even if you have a job, it doesnt pay very well which is one of reason why so many young italians still live with their parents even if they're in their 30's and many well educated people go abroad. As much as i love my country ,i hope i can move abroad one day to find better opportunities and life. Im happy that you like living here and i wish you nothing but the best. However, for a native point of view it's kind of "sad" that the main reason why you can enjoy Italy so much is because of your (well deserved) american wage. Enough with this work trend... it's half true (as in all countries of the world, even in the USA if you ask 10 people on the street at least 5 will tell you that they are dissatisfied with their work and underpaid!!... for cons also in Italy there are excellent job opportunities that depend on the company and the working context) and the other half is a catchphrase like many others, from Italians who always complain about everything about their country!!! take a trip abroad and you will understand that there isn't much better out there....
If you find a very well paid job abroad you can be sure that you will NO longer have a social life... but you can also make this work sacrifice in Italy...

@@maxdelpo5578As you said it is a real problem (I repeat it exists in any country in the world even in Dubai!!!) but almost always exaggerated by young people who do not want to sacrifice themselves to work and chase the Sirens of work abroad which is perhaps better paid (but it always depends on what specialization you have, 80% end up being part-time waiters!!! you know what you earn!!!), but with less holidays than in Italy, in case of illness or accident no health coverage ( you pay out of your own pocket!) you have to dedicate many more hours to work, and have no social life (just listen to any foreigner who envies the Italian lifestyle with outings with friends, dinners and aperitifs)...
So there is absolutely no need to go abroad to do a few years of sacrifices to save some money!... Coming from someone who worked for 3 years in England (I didn't go to London on purpose) but my the goal was not to make money but to learn the language while maintaining a job, therefore saving my money and enriching myself culturally.

About pasta, pesto but no chicken: thing is, pasta al pesto is a traditional dish from Liguria, and while you can use pesto with something else, if one eats pasta al pesto we tend to think one should keep it as it is. You may find some purists who will give you pasta al pesto with potatoes and string beans, because that’s how they eat it in Liguria.

I will not be driving any sort of vehicle around here 😂😂 I’m way too scared and even more scared of driving a scooter or Vespa seeing the way people drive. For now I take buses or trains and my boyfriend and friends have cars so I’m all good. 😊

THere's an exception about chicken and pasta, but it's not about "fried" chicken. I's typical of Rome and it's called "Pasta alla Papalina". It takes the name from its very rich ingredients so it's something that in the old days was like "reserved oto the Pope". It includes eggs like Carbonara, but also peas and chicken livers. A variant, still with chicken livers is colled "Pasta alla cova". Anyway they aren't very common, neither in Rome.
Many of my friends complain about low paid job but they do some part time bartender job which as I lived 5 years abroad as student I saw was paid the same if not less in some countries (still in Europe), as I did this kind of job to have something and it was even fun for me, but it is not high paid job elsewhere too and I think it is rather not the kind of job you do for the whole life 😄

@@SheaJordan You should ask someone that knows about Italy, someone with a modicum of local Culture. There is ALWAYS a reason for rules (particularly about food and drinks) and it's usually much more scientific or practical than you could suspect it is. Chicken is NOT very popular in Italy, because is seen as very inferior meat that cannot be made good curing it as in pork meat. In Northern Italy, in particular, chicken is used for soups and chasseur style pot only (and sometimes roasted as fast food). It is not the staple food of any part of the peninsula, anyway, and them birds are traditionally kept as eggs hens, and not eaten until they are old and not so nice at all (good for consomme only). So it's basically impossible to turn chicken into a sauce for pasta, given the absence of natural fats and drips, that would made it taste as cardboard (as usually does). It is considered the epitome of peasant subsistence food, not always available and generally not part of the great cuisine. Industrial farmed chicken has also the infamous reputation of being pure sh..t, not food. As per cutting spaghetti, it's a practice that means you can't eat them like a normal human being, but only making a obscene mess of the plate and of your clothes. Cappuccino it's not only not drank later than early in the morning, but it's not really so popular at all (a bit more now that it used to be, but try to stay for some time in a bar and see what people orders, and you'll realize that apart for tourists, everybody has black espresso coffee). Milk is a peasant subsistence casual food used mostly for cheeses and creams, traditionally. It's very common for Italians not to be able to digest milk at all and this intolerance is made worse if milk is mixed with wine that, until a generation ago, was basically compulsory in form of appetizer drinks (like vermouth) and as the only one drink at lunch and dinner. Ask some gourmet, especially in Bologna there are many of them: it's the sort of people that you can recognize as middle age or older men, wearing bow ties, loafers and usually quite traditional attire, spending looooong time at their table in traditional good restaurants. They are the best source of info on the matter, and enthusiastic about passing their knowledge.

Se hai vissuto a Bologna per 2 anni io da quando sono nato nel 1958. Il termine pasta si riferisce ad un tipo di grano che è tipico del Sud Italia che si chiama grano duro o in inglese durum. Oggi è coltivato in tutta Italia anche qui in Emilia prché bologna è una città emiliana anche se storicamente il confine dovrebbe essere il fiume Reno in seguito al fatto che Bologna faceva parte dello Stato Pontificio fino al 1859. Questa parte dello stato pontificio, da Bologna fino al mare Adriatico veniva chiamata Romagna ed era una legazione pontificia, in quanto vi era il cardinal legato che oltre alle funzioni tipiche religiose aveva anche la funzione civile di prefetto, mentre per quella militare si appoggiava all'esercito austriaco che era al di là del fiume Pò. Infatti i bolognesi nel 1848 si erano ribellati ed il cardinale aveva chiamato in soccorso gli austriaci che però sono stati sconfitti dai bolognesi, e c'è un monumento che ricorda questa battaglia in piazza 8 agosto alla Montagnola, dove adesso ci sono gli spacciatori di droga h 24. Questa parte del territorio dello stato pontificio, che adesso è ridotto ad una parte del territorio di Roma, comprendeva anche le Marche, l'Abruzzo e naturalmente il Lazio. Si chiama Romagna perché dopo la caduta dell'impero romano d'Occidente a causa delle molteplici presenze di re goti uno di questi chiamato Odoacre, re degli eruli, nel 476 dc depose l'ultimo imperatore romano che era già di stirpe gotica e si chiamava Romolo Augustolo, un ragazzo di 15 anni. Ma rimaneva l'impero romano d'oriente con capitale Costantinopoli in Anatolia. Questo impero durò per altri 1.000 anni. fino alla conquista turca della città. Caduto l'impero romano d'occidente quello d'oriente intraprese quella che viene definita la riconquista. Per prima cosa distrusse i regni vandali che si erano insediati in Nord Africa passando attravrso la Spagna e che avevano compito un sacco di Roma risalendo lungo il Tevere, poi si insediariono in Puglia eappunto in Romagna. Per questo motivo si chiama così, per via della riconquista dei romani d'oriente, detti anche bizantini, per via di una piccola città romana che esisteva prima di Costantinopoli. Ma questi romani che chiamavano se stessi romanoi non parlavano più latino, ma greco, e l'imperatore non si chiamava più imperator, ma basilisco. Le guerre goto bizantine furono estrememente feroci e devastarono le pianura padana con avvelenamento dei pozzi d'acqua. Tuto questo finché non arrivarono gli ultimi barbari ad invadere l'Italia. I longobardi, che erano partiti dalla Svezia meridionale, detta Scania ed essendo una popolazione nomade si erano stabiliti in Ungheria dove si erano cristianizzati nel rito ariano. Poi erano entrati in Italia dal Friuli. A Cividale del Friuli c'è la tomba di un loro re che si chiamava Raki. Invasero tutta l'Italia ad esclusione della Romagna e del Lazio fino a Benevento. Ti dicevo che appunto la pasta viene fatta col grano duro che è una varietà di grano piena di proteine vegetali, viene macinata e poi impastata con acqua, poi premuta dentro a delle trafile e quindi essiccata. ma noi tradizionalmente a Bolognanon siamo portatori di questa pasta che è arrivata dal sud con gli immigrati. La nostra tradizione basata sui tortellini, le lasagne e le tagliatelle è basata sulla sfoglia, perché deriva dal nome foglia. Si prende della normale farina bianca e si impasta con le uova. Questo perché la farina bianca non ha delle proteine vegetali, è tutto amido e con l'acqua nonstarebbe assieme. Per qusto motivo la impastiamo con le uova. Poi non viene premuta, ma ridotta ad un foglio col mattarello o con delle macchinette a rullo e manovella. Dopo di che ci fai le tagliatelle o i tortellini o i tortelloni che sono più grandi e si fanno con la ricotta vaccina, un uovo il prezzemolo, sale, il parmigiano e la noce moscata. Vengono bolliti e poi si mangiano scolati e conditi con passta di pomodoro, buro e parmigiano. I tortellini come ripieno hanno 1/3 di lombo di maiale, 1/3 di mortadella 1/3 di prosciutto crudo, un uovo, sale, noce moscata. La pasta e la sfoglia sono due cose diverse. La sfoglia non si può conservare perché si rompe, al limite si può congelare, ma non si mantiene come la pasta dentro un contenitore. Bisogna farla e cucinarla subito o congelarla. Insomma l'Italia è un porto di mare, più mischiati di così non potremmo essere: tedeschi, romani, greci, svedesi, normanni, ma ad un certo punto ci siamo amalgamati in una nazione, anche se di simboli dell'unità nazionale ce ne sono pochini perché il nostro stato ha appena 170 anni, non come la Francia o l'Inghilterra che ne hanno mille. Come fanno ad imporre le loro ideologie sulla multiculturalità? Co denaro. Ad esempio in America finanziano le campagne elettorali a tutti i levelli che sono molto costose e nessuno potrebbe permettersi di spendere un mioliardo di dollari per diventare presidente per poi avere un grande potere internazionale, ma ricevere uno stipendi pro bono publicum. Se passato il mandato vuole diventare ricco o addirittura come la figlia dei Clinton entrare nella grande ricca comunità e.....a americana avendo sposato un ricco rampollo e...o, oppure anche la figlia di Trump Ivnaka, stessa cosa. il pollo con la pasta dipende come lo cucini, in genere vanno molto i piatti unici fuori dai monenti, tipo la domenica e le festività, ma il riso freddo l'hai provato^_^ insalate di riso o con la pasta? il modo di vestirsi dipende anche da regione e città, provincia, uscire in tuta è fattibile, alle volte sotto casa puoi anche andarci in pigiama almeno dalle mie parti ^_^, per il resto il tempo finirai con usare anche parole dialettali ^_^ per quanto siano bolognesi ^^

From what I've seen, Americans put a breaded slice on top of spaghetti. This is not good because to cut the slice you cut the spaghetti into little pieces and then you have to eat it with a spoon. Simple logic, if you have to cut it with a knife, you don't put it on the pasta because then you destroy the pasta, but if the meat is already in pieces like ragù for example, you can use it as a condiment

I have a theory why no chicken + pasta. In the old days, hens were kept for eggs, and by the time they were too old to lay the little meat they have had become very hard, requiring boiling for hours to become edible. Young male chicken was expensive and was eaten only as a special dish, on its own. So, the meat that was usually available was mostly pork or veal/beef (which you got as a byproduct of milk and leather production). Cheap chicken is entirely a product of modern industrial farming. For this reason, chicken did not become traditional with pasta. By the way, here in Veneto, we have a strong tradition of pasta with duck and even pidgeon.
But outside the fact that young male chicken was expensive ecc just count that old italians use to do big portions of ragù even at home with all the family so of course is worthed to use 1 pig/cow instead of killing 20/30 chicken for 1 big ragù, is just that chicken got less meat in general so doing it with chicken wasn't worthed in any way, but on one side we are right becouse i did try chicken and pasta once and it sucks, maybe is becouse im italian so the combination doesn't exist in my brain but really doesn't taste good the chicken is too much salty and everything that you taste is salt and chewing gam consistency

don't worry about feeling italian. We are the result of a LOT of invasions, cultural exchange, conquests, immigration and emigration... if you feel comfortable here, you can feel italian without being an impostor, especially in Bologna, that is notoriously politically oriented to the left (hardcore communism often, but i don't know if for USA people it's a good thing...)
SO, don't worry, you will get the hang of it eventually. Also, i suggest, if you have the opportunity, to live here but getting paid for your work somewhere else. Italy is a beautiful place to live but a horrible place to work considering the european standards.

Eh, se vuoi ti spiego una delle ragioni per cui in Italia è considerata un'eresia mangiare la pasta con il pollo :')
Devi innanzitutto considerare la natura contadina, 'povera', del 90% dei piatti che costituiscono la cultura culinaria italiana, questo è fondamentale per comprendere.
Il pollo, dunque, è sempre stato considerato come un 'privilegio', un pasto a sè, quindi erano considerati una sciocchezza e uno spreco usarlo con la pasta, facendo così un solo pasto con due pasti! Non serve altro, no? Ti è chiaro? Bene :')
Quindi, il pollo veniva cucinato e servito come una seconda portata e, eventualmente, i suoi scarti, le 'rigaglie' (le interiora, cuore, fegato, etc.) venivano usate per preparare un condimento per la pasta (condimento squisito, tra l'altro) Insomma: era vietato buttare le cose e in questo modo veniva usato tutto con criterio.
Quindi non è esatto dire che in Italia non si mangia la pasta con il pollo, è più corretto dire che 'non si spreca il pollo usandolo per la pasta'!
Sono ragioni culturali conclamate con gli usi e le abitudini determinati dalle 'necessitá' pratiche quotidiane :')
Poi ci sono le ragioni legate al gusto e in Italia non ci si può certo insegnare quali debbano essere le regole del 'buon gusto' a tavola :')
Oggettivamente il gusto del pollo nella pasta non è proprio il massimo, non quando si può optare per l'oca, per esempio, o per tutto lo spettro di carni che si hanno a disposizione, dal cinghiale passando per la lepre con tutti i bovini, ovini e suini che stanno nel mezzo :')
Ovvio, poi, che ognuno debba mangiare quello che più preferisce come meglio lo preferisce...non per nulla noi siamo italiani e voi americani (perdonami) :')

I am Italian, and when I speak to Americans I wonder why they move their hands always in the same way, without conveying any meaning. Italians move their hands to convey specific meanings. If your gestures have no meanings, why do you move your hands?
I feel like there is still meaning, maybe not in the sense of Italian hand gestures, but people use their hands for emphasis, to show emotion, etc. Talking without moving your hands at all honestly seems a bit strange to me 😂

I am Italian-born Russian, and let me tell you although I wasn't born or raised in Russia I belong to that land, defended that land and ready to do anything for her, so whether people ask me for my nationality I quickly answer that I am Russian, don't get me wrong I know I am not ethnically, but ffs we are in 2024 and still think like primates, nationality is in my honest opinion a matter of mind and actions, not race... our genes are so mixed anyway that nobody can be from somewhere without also having the DNA of someone in the other part of the globe, so to me if you feel to belong to Italy enough for you to consider yourself part of that land and culture, and you'd be ready to defend it, then you are Italian end of the story, of course, if you consider yourself Italian you can't ever feel to belong to somewhere else, that'd be weird otherwise, but surely you can be ethnically from "X" but being nationally from "Y", furthermore Italy has so many differences between ethnic Italians that' it would be almost impossible to consider one more Italian then someone else, that also fits well Russia, Inidia, the US, the UK, Germany, France, Spain, etc... Isn't it time for us to give more credit to what and where a person feels to belong to, and not where it was born or their parents were ?

At this point let's put nutella on seafood too); but although it's a bit rarer for me it's quite normal to ask for a cappuccino even at 17:00 (not later than 17 though. Bars open at 5:00 o'clock and close at around 19:00 o'clock. Cappuccino is meant to be breakfast. Who would do breakfast at 17/18 o'clock 👀). Even chicken on pasta, it's not that great but it's a cholesterolless alternative to red meats like pig's and steer's meat!
