- MY NANAY'S LECHE FLAN
10 egg yolks (use XL / Jumbo yolks, or add 1 to 2 more if using medium)
1 tall can evaporated milk
2 cans (380/ 390 grams) condensed milk
zest of 3-5 Dayap, OR zest of 2 lemon
2-4 tablespoons sugar per Llanera (leche flan mould), for caramelizing

iba talaga ang Bikolana magluto... tikim lang talaga walang eksaktong measurement. At talagang laging may kasamang pagmamahal.

Yung tinutukoy ni nanay ay yung techniques sa paghahanda at pagluluto from ingredients to finished products, meticulous and matyaga na proceso, that makes the diferrences in outcome of dishes. Fast-paced na kasi mentality and approach ngayon kaya may pagkakaiba talaga even with same ingredients used. This also displays the generational differences. I used to make leave flan back home and it takes patience because I had to make sure the mixture is really smooth, the caramelization, constantly watch watch it during the cooking/steaming. I used an electric steamer and cook two batches and had to make sure theirs no water droplets from the cover that may get into the llanera while cooking. Usually made them during Christmas to give away to friends.

I should have miss my Mom also whose making us a good food since we were young. To all the moms show them the Love you can cuz one day you gonna miss them so much the things they have done to us. Your nanay is very cool she knows the little things of cooking a very raw techniques. I know it's very hard to cook the lecha flan pinoy style. I have tried many times but your nanay said is the way how to make it in a gentle manner I agree.
