    INGREDIENTS
    cake flour 200g
    unsalted butter (cold) 145g
    water (cold) 72g
    salt 2g
    white sugar 60g
    dusting flour
    1. Cut the soft flour and butter together with a scraper to the size of a pea.
    2. Add cold brine and make a lump.
    3. After refrigeration for about 1 hour
    4. Make 3 folds by pushing long.
    5.30 minutes refrigerated maturation
    6. Push, fold and ripen
    7. After rolling , cut it to an appropriate size
    8. After rolling in sugar, preheat the oven to 210℃ sufficiently.
    Bake at 200°C for 10 minutes and at 190°C for 8 minutes.
    (Be sure to adjust the oven according to your specifications. If the oven temperature is too high, lower the temperature a little.)
