I saw them in our neighborhood woods while growing up. To me they were pretty and I'd pick them with other wild flowers plus whatever I could find in my mother's garden for arranging to decorate our eating tables and living room. I never knew that they were eatible let alone medicinal 💚🤗

I started an elder bush in my yard a couple years ago, it is already over 6' tall and is loaded with flowers that haven't started to open yet. I will be using a few of the flowers for teas and other things but I'm mainly wanting the berries for making syrup.

Not very healthy but we usually make a sweet cordial:
    60-65 flowers
    4 l water
    2 kg sugar
    5 sliced lemons
Boil the water, pour it over the sugar, let cool, pour over the flowers and the lemons, let stand in the fridge for 3 days. Store it in the freezer. I use old ice cream containers. One can scoop it out with a spoon and mix with water. It is refreshing and very good.
This turns out great with gin and pear cider. Gin and elderberry is a very tasty combo.

And do run it through a mesh before freezing or a fine sieve or such.

Would essential Clive oil spray help control bugs and still keep the flowers for our use?

I think you are supposed to make an egg batter with flower for dipping then frying, just like a fritter.
Will have to disagree with one thing..the American elderberry are not as tough as the European variety, which are fatter, heartier and have red stems. The European are my preferred kind to work for several reasons. #1 easier to pick #2 do not grow mold so easily like the American kind, #3 easier to remove berries from the stem too #4 much stronger medicinally; due to the tough qualities I just mentioned above..
