These look amazing! Growing up, my Dad always made a recipe for what we used to call "potato tacos." It was very simple, just ground beef seasoned with s&p, then mixed with cooked diced potatoes that were cooked soft, he boiled them I believe -- they weren't fried. Then he put the mix in flour tortillas, folded them in half (taco), then fried them. Top with lettuce, onion, tomato, cheese and favorite taco sauce or condiment. They are SO GOOD!!!!
I've been cooking and or making your recipes one by one in your cookbook, I must say each thing so far is absolutely amazing. Lots of love and air hugs from Houston Texas ❤❤❤❤❤

My mom introduced us to ground beef and potato tacos shortly after she started working part-time in my elementary school cafeteria. I don't remember tacos being served for lunch, but at that time I brown-bagged it. My parents are from Michigan, moved to New Mexico when I was 6 weeks old. I consider myself NM raised and am proud of this state's unique food and traditions. One more thing I wish to say is that I value all culture's definitions of their food, traditions, how they grow and use the food they grow. Let us all learn.
Hi Claudia, Maybe look at getting a Ricer, they act like a big garlic press when you put the potatoes through it they come out as the most beautifully smooth mashed potatoes ever. Very inexpensive and saves a ton of time. We love your recipes! Thanks.

I honestly have been in a rut of making the same things over and over. I have a kid on the spectrum that is very picky, so we just kind of fell into a rut of sameness. I feel super inspired to try many of these recipes! I think my kiddos would actually eat!

Here in Las Cruces, NM, it is hard to find tostadas (bean or meat topped with lettuce & tomato), or taquitos with avocado sauce which were everywhere in California where we came from. Different regions, different food offerings!

The white corn tortllas taste like a regular flour corn, but the yellow corn tortillas have a sweeter taste, that I really like. you will too.

But that's not for this recipe. A ricer doesn't give you chunky potatoes which is what you need for the taquitos.
