WHITE SAUCE PASTA
Preparation time 10 minutes
Cooking time 10-15 minutes
Serve 2-4
Ingredients
For White Sauce
100 gm Butter, cut into cubed, मक्खन
100 gm Refined flour, मैदा
1 ltr Milk, दूध
1 tbsp Butter, cubed, मक्खन
For Boiling Pasta
Water as required, पानी
1 tsp Oil, तेल
Salt to taste, नमक स्वाद अनुसार
2 cups Penne Pasta, पेने पास्ता
1 large Carrot, cut into dice, गाजर
12-15 no. Button Mushrooms, cut into half, मशरूम
2 tsp Oil (for coating), तेल
For White Sauce Paste
½ tbsp Oil, तेल
2-3 Garlic cloves, chopped, लहसुन
¼ cup Sweet corn kernels, blanched, भुट्टे के दाने
Boiled Pasta & Vegetables, उबले हुए पास्ता और सब्जियां
⅓ cup Remaining Pasta Water, पास्ता का पानी
1 cup Prepared White Sauce, वाइट सॉस
¼ cup Processed cheese, grated, चीज
2 Green chillies (less spicy & chopped) हरी मिर्च
1 tsp Coriander leaves, chopped, धनिया पत्ती
1 ½ tsp Extra virgin olive oil, जैतून का तेल
For Garlic Bread
1 ½ tsp Oil, तेल
2-3 Garlic cloves, crushed, लहसुन
Baguette, Slices, बगेत ब्रेड
For Garnish
Basil leaves, बसिल की पत्तियां
Process
For White Sauce
In a sauce pot, add butter, once it melts, add refined flour, stir until creamy/ lump free and cook it for a minute.
Slowly & gradually add milk, whisk continuously until it's smooth & creamy. Cook it for 2-3 minutes or until slightly thicken.
Transfer it to a bowl, add butter for coating to avoid layering.
Keep it aside for further use.
For Boiling Pasta
In a pot, add water, once it’s boiling, add oil, salt to taste, penne pasta, carrots, mushroom and cook it for 8-10 minutes or until at al dante stage. or until al dente
Strain the excess water and coat the pasta with oil to avoid sticking to each other.
Keep it aside for further use.
For White Sauce Paste
In a pan, add oil, once it's hot, add garlic, salt to taste, corn kernels and toss it for a minute.
Add boiled pasta & vegetables, remaining pasta water and saute.
Add white sauce, processed cheese and cook until the cheese melts.
Add green chilies, coriander leaves, olive oil and mix it well.
Transfer it to a serving dish, garnish it with basil leaves.
Serve with garlic bread.
For Garlic Bread
In a pan, add oil, once it's hot, add garlic and cook it until golden brown in color.
Add bread slices and toast it until golden in color.
Keep it aside for further use.

There is a debate whether Mayonnaise is really a mother sauce or not and some consider Hollandaise to be a mother sauce (famous on eggs benedicts) with its most common derivative being the Bearnaise.
But more importantly, alfredo is not a derivative of bechamel. Alfredo is an italian sauce made with heavy cream and cheese and occasionally garlic but it doesn't have roux (the butter+all purpose flour mix at the beginning). Becahmel is characterised by roux.

Thanks for the recipe and crash course Chef - bura mat maanna par mushroom boil kyun kar diye. As you know, mushrooms have high content of water so have to be pan-fried to intensity the flavors - agar aapko boiled mushrooms ka flavor pasand hai toh aur baat hai. Also, pasta water main tel kyun daalna - waste hoga, aur salt ka bhi bata do - should taste like sea water...

In one of the pasta basics video , you recommended that Penne is not good choice for cheese sauce pasta, instead noodle shaped pastas or pasta with large surface areas are better such as farfalle.

Hello Chef, you suggested that we can also add onion in the sauce. I'm not sure how true it is, but it is said that onion & milk are opposite food and should not be clubbed.

Freshly grated nutmeg, salt and pepper would improve the flavours of the white sauce (bechamel) a bit more...gruyere, emmental or parmesan cheese is also added at the end...

Sir, few questions:
1. Some people suggest not to pour oil in water during pasta boiling time.
2. Some put salt in white sauce in the milk itself, but many ayurveda experts claim that don't put salt in milk. I used to fondly cook this white pasta dish earlier, but due to above claim I am scared and stopped cooking it.
What do you suggest on these two opinions?
This pasta is my son's fev pasta.From this video we learned how to make proper white sauce pasta and also got to know the variations of pasta sauce.thanks RB😍😋

I learnt white paste myself. I didnt like the maida one because it was too heavy with Butter + maida. I used wheat and butter and the combination was awesome. You need to keep stirring well and use Pasta stock + milk to make it smooth.
