I've hit gold. Perfect flavor. Fantastic chow mein. For anyone who wants to follow in my footsteps, these are the ingredients, proportions and directions I used for a one person, one bowl serving. I'm using ching's red chili sauce and ching's green chili sauce. 1. Chop 0.5 onion, 1 spring onion, 0.5 tbsp ginger (1 tbsp is too much), 2 cloves garlic, 1 green chili, 0.5 green bell pepper. Prepare cabbage. 2. Boil water, add 0.5 tsp salt, add 0.5 cake noodles. cook until soft 3. Sauce mix - Add 1 tbsp kikkoman soy, 1 tbsp rice vinegar, 0.5 tbsp green chili sauce, 0.5 tbsp red chili sauce, 0.5 tbsp roasted sesame oil (new ingredient, for great aroma), 0.5 tsp salt (important), 0.5 tsp garam masala, 0.5 tsp degi mirch chili powder, 1 tsp sugar (this is important. You want the saltiness and sweetness to balance with the chili sauces tanginess and green chili spiciness) 4. Use a wok. Heat up. Add 1 tbsp peanut oil (high boiling point, ideal for wok use), add in onions, ginger, garlic, chilis. 5. Once aromatic and browning, Add bell pepper and cabbage. 6. Once cabbage is wilting, add drained noodles. mix well. 7. Pour in sauce mix and combine well. Reduce wetness, let it dry out in heat. 8. Transfer to bowl, garnish with spring onion. Absolutely perfect and balanced flavorful chow mein Indian style. Hope this helps.

Chef 2, it’s time for you to combine Chef1’s and your efforts. That means, tossing the noodles with the vegetables and the sauces. In a pan heat some oil. Add onion, ginger, garlic, green chillies to it and saute for a few seconds. Now add red bell pepper, capsicum, cabbage and saute for a minute on high heat. Then add boiled noodles, prepared sauces mixture, spices mixture, red chilli sauce, soya sauce and toss it properly until well mixed.
