    This is a recipe for pickled rakkyo in sweet vinegar that can be enjoyed the next day after being lightly cooked.
    [Ingredients] For 800g of rakkyo with skin
    - 800g rakkyo with skin
    * 650g peeled
    - 500cc rice vinegar
    - 300cc water (if you like it sour, reduce the water and increase the rice vinegar)
    - 100-150g granulated sugar
    - 2 chili peppers
