💑 About Hercules Candy
Hercules Candy has been on Steve’s side of the family since 1910(ish). When he took over in the 70’s, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesn’t love being on camera and is very elusive) is their oldest daughter. You knead, stretch and fold the candy to add air. The tiny bubbles enhance the candy in many ways. 😊

To add air into the mix, which will change color and texture. You hammer either to shake the candy off, as some had stuck to it in the past, or to keep it attached to the wall mount.

The candy in the hook acts like a non-neutonian fluid. It becomes solid under the percussive action of the hammer. Thus releasing the candy.
Putting it on the hook puts air to it and changes the color and the hammer releases it off the hook.

how long do you keep the mixture on fire
and when packaging you guys put 2 small white items in with the candy what are those?
Until it reaches 310°F and those desiccants, which help the candy from sticking together 😊

Why aren't you able to stir the dry powders into the liquid before you do the pour? I've thought this question when you add sour as well.

Can you “over hook” the candy? What happens if you do? Also, when the drops break, what happens to the candy dust? You throw it away?
It would just get too cold. And unfortunately yes, we do. People have said they would like to buy it from us, but unfortunately it very quickly all sticks together with a rather unappetizing and sticky texture, so for that reason we throw it all out
I feel like you should be using a rubber spatula for scraping the bowl, no? I just feel like you can get more out that way
Why do you use these cooling tables instead of a marble table like some other candy makers do? To me, a complete outsider, it seems like you have more control of the cooling process with marble. Genuine question.
Actually you have significantly more control with a cooling table because you can run water through it of whatever temperature you want to heat it up or cool it down whenever you want. Marble only really cools down and heats up based on the previous batches and how you're using the table during the current batch.

You should check out friends over at Rocks & Rolls candy, they're in the Netherlands too! I was actually there to meet them back in July, really great people and candy!
How many steps do you guys average?
If both sugar and corn syrup are both sweeteners, why not use just one or the other; like, what purpose does each bring to the recipe?
I think the ratio affects the texture and gloss. Just sugar would be much harder, more difficult to work with, and less glossy
