    I love how despite hundreds of videos, across many years, repeating it, Craig has made sure that, even in the no talking ASMR videos, we have an explanation as to why they do not use a ladle for the corn syrup.

    I have made pecan brittle now for over 50 years. This is the first time I've seen it made in big batches. I use a small sauce pan and pour the brittle over the pecans that are on a cookie sheet. U.S. A..

      My boss used to make peanut brittle for folks, but he made cashew brittle for me.

    The sounds are great in this one! The scissors making the first cuts through the brittle and the crispy sound the brittle makes after it's been stretched are my favorites. I would be so tempted to drop those big pieces just to watch and hear them shatter! 😄 I also like the sounds of the bags as they're being filled. Thank you for the great explanations. ❤

    I have always loved hearing the banter between everyone in your videos, from even way back to when you were working in the basement. I personally feel these no talk ones are boreing. Others amy feel differently. You cn only watch someone silently make the candy so many times. I always come for the " entertainent " and the smiles you bring to my face while you work to brighten my day. Plus you have removed all the old videos so we can no longer go back and rewatch our favories.

    Why not use pure cane sugar instead of high fructose corn syrup? I see you use cane sugar but what is the purpose of the thick syrup?

    I love this channel. I don’t even eat a lot of candy either . I don’t even eat pecan or peanut brittle. But It looks so good , especially the pecans being added. I know it’s diff, but my mom loves store bought peanut brittle. It just reminds me of her. Love the vids !

    Simple recipe watching my Grandma as a child, was vook the syrup and pecans in the kettle,then when it can be dripped into a bowl of cold water and itbecomes brittle, its ready.. then add a teaspoon of vanilla extract and a teaspoon of baking soda.. then stirz like a madman..then pour it into buttered baking sheets and shake it more to even it out.. then put in the freezer for about 15 mins. The end

    Absolutely love the process, care and attention to detail in the making and production of the pecan brittle, have tried a version of it when I was in the state's years ago and was hooked. Not sure if it would survive the transport to Australia. If you know that it does please let me know I'll be a customer. Your video on how it's made, makes my mouth water ❤

    Fabulous video, I love the absence of narration and the pure focus on what's happening. WAY WAY better marketing the junk in so many "how they make ..." videos.

      3/4 cup sugar 1/4 cup water. 1/4 cup Karo white syrup, 1 tsp baking soda. New box. Small sauce pan add syrup, water, sugar cook until lightly brown an

      Add baking soda stir quickly pour over pecans on baking sheet. Spray sheet with Pam to prevent sticking

    I've never had pecan brittle, it sounds and looks amazing! Please forgive my ignorance, but I thought the purpose of adding the baking soda was to slightly aerate the brittle so it wasn't so hard on your teeth. Wouldn't smashing it down and thinning it out beat out all the air? It's been a while since I've made a brittle, but I might have to try again with pecans.

    Make my own brittle, much smaller batches of coarse. Always receive compliments because it's so much lighter & more airy. Everyone says it's easier to eat.

    I am so curious the table you pour all your candy onto sometimes you got rods up there to block it for to make a damn up is that a heated table or a cooling table or can it be both I'm just curious about that.     Two questions. No Butter? When I make this with Peanuts I have put in a bunch of butter..? Second question, do you not have to stir while the syrup/sugar mixture comes up to temp? I usually end up getting burning if I am not stirring.

    I have never made nut brittle with baking soda. Every brittle I have ever made or bought had clear sugar and the nuts and was thinner.
    Also, when using pecans for the nuts, add vanilla and use maple syrup instead of corn syrup; the flavor is astronomical!

    I hope that wasn’t the same bag of baking soda get from Costco, which sadly it looks like it, cuz that one specifically says not for use of baking/ cooking and it’s meant for cleaning only as the grain of baking soda isn’t as fine powdered

    All that baking soda to make it light and airy. Only to smash all the air out of it and make it as flat as hard you possibly can. I made peanut brittle for twenty years or more. The best recipe I used was from a very, very old southern cookbook. Using virginia peanuts, two tablespoons of baking soda. Every year at Christmas, I would get rave reviews about how light it was. People would tell me all the time that they didn't like peanut brittle, because it was too hard to bite, and it would stick in their teeth, was too hard on dentures. Or needed to be smashed with a hammer. I would smile and say, "Just give mine a try." Every year, I would have so many orders I could hardly keep up.

      This has always been my question. My recipe (handed down from a great aunt), contains both baking soda and vinegar, and remains the only recipe I've seen to use both. It's light, crispy, and full of air bubbles. I respect the preference for a thin brittle without the air pockets, but I can't help wondering, every time I see something like this, what the point is of adding the soda in the first place. 🤔

      I agree. I've been making and selling brittle for seven years now... Small batches as I will only use cast iron pans and generally make 10 pans per week. I don't understand why anyone would release the air bubbles! My brittle is light, airy and crispy.

    What does the baking soda do? I'm guessing all that sugar is acidic?

      It makes it rise and gives it a fluffier texture because it adds a bunch of air bubbles into the candy
