LIFE UPDATE & MOIST FALL PUMPKIN PECAN MUFFINS (VEGAN/ GLUTEN FREE!)

- Hi Friends, I hope you are well. Today I'm revealing an exciting life update for our family and sharing the pumpkin pecan recipe I've been devouring this fall. This muffin recipe is moist and flavorful and the perfect fall treat. I use plant based butter like Earth Balance or Smart Balance along with making 2 flax eggs in order to make these vegan, however, you could replace the flax eggs with regular eggs if you don't have ground flaxseed.
If you use gluten free flour, use 1 1/2 cups. If you use regular flour, use 1 3/4 cups. This recipe is scrumptious either way! The 1/2 cup applesauce can be replaced with 1/2 cup vegetable oil if you don't have applesauce. Bake about 25-30 min at 350F.

Rebecca, this is exciting! You should definitely be in touch with Marie from Crafty Girl. She left Florida and had a house built for her in Texas. She unfortunately wound up having to back out of the deal but she had chosen everything in that house and has gained a lot of experience.

Congratulations! One of the greatest things we did when building our home was putting outlets outside for our Christmas lights. It seems like a really ridiculous thing, but it was the best thing we did.

Put in outlets everywhere, more than you think you need. Deep drawers in kitchen for pots and pans.

As a realtor I will say use nice materials but dont buy the most expensive in case life changes and you need to sell. Though housing market is crazy right now but might not be in the future,

Congratulations on your new home!!! I definitely would suggest putting in a central vacuum system and the dust pan outlet with the vacuum.That way all you have to do is use a dust mop and push dirt over to the dust pan in the baseboard and it goes to the vacuum. Would love to see the progress of your new home.SOO happy for you guys!!!😊
FYI, is that regular white sugar because it's not vegan
True, I've heard they run regular granulated sugar over bone in order to get it more fine. I listed it as vegan because it is made without eating animal products (ie dairy/eggs) We look to eat plant based most of the time so I'm always looking for "vegan" recipes to find yummy things that don't have meat, dairy or eggs :) Thanks for pointing that out though and feel free to use whatever sugar you would prefer! Let me know if you try coconut sugar how it comes out, but I think it would work well!
