One suggestion is to use less oil because it’s such a healthy dish already and can be done with less than half of the oil (personal taste of course) and I usually like to wash the rice and the lentils before cooking! The recipe seem to be the most legit one as far as I know. Many folks add other spices or garlic but the lentils and rice plate with caramelized onions is supposed to be like the one you just showed. So the sweetness of the onions take the front of the stage. Too many ingredients fail this simple classic recipe, in my opinion. Thank you, miss.
I made mujaddara 3 times this week (I really wanted to "solve" this recipe, for me). I think I did. Mostly because of real home cookers teachings like the video you provided, who learned to cook watching their grandma. There is no garlic or carrots, etc in the mujaddara. Only onions, lentils and rice. And the love of the cook. But you have to pick the best ingredients for this minimalist recipe. The difficulty, to me, was to find the exact timing so the rice will be prefectly cooked at the same time as the lentils will. A lot of people are cooking the rice separately and then add it but you will lose the flavor of the onions in the rice completely if you do that. Miss, your mujaddara recipe is THE recipe and the procedure you follow works. You can use olive oil only and more of this less of that as you like but the procedure you showed works and the taste is fantastic. Again, thank you for sharing. Your mujaddara taste better than fancy chefs.

It turned out okay but the water was immediately absorbed; so I kept adding more and more water but it was still absorbing then the bottom of the pan was burnt. Any idea why this happened?!

I make this all the time, my simple recipie , chopped onions into the cooking pan with about 2-3 tsp of oil, fry for some minutes, add up the cinnamon, cumin and little tamarind sauce, salt , and my lentils, then followed by hot water , cook for at least 15mins, add cleaned rice into the pot and cook again for about 8-10mins, enjoy with some red sauce 😍😍😍😍
The perfect rice for this recipe is Egyptian rice or the Italian rice because it has small grains and if u have u can use like me basmati rice it okay but make sure to use the good quality .
No it's not cooked when u add it to the lentils leave it 7 minutes to boil with the lentils then cook cover them and cook them the way you cook the normal rice : )

+emma easton Hi, i'm using brown lentils , caramelized onion should be on high heat and will take about 5 minutes or keep stirring them until they become golden brown and crispy : )
I don't prefer to add sugar because the caramilized onion is already sweet but if u like the taste of sweetness to be more strong so its up to you but i never try it : )
It’s not important to wash the rice , The reason to rinse is to remove surface starch from rice grains, which can make them gummy as they cook. Soaking allows rice to absorb water, giving it a leg up on cooking.

We make a mistake when we judge the health merits of how a single dish is made. Food from certain areas needs to be judged in contex of a dietary lifestyle. The middle eastern diet is much higher in fresh vegetables and plant proteins than many northern european diets. Plus. They are not addicted to super market chemically processed and/or commercially made fast food that is loaded with chemical preservatives , huge amounts of sodium, refined sugar, assorted other sugars, and other substitutes for natural and healthy fats. When your general diet is very health concious you can afford to indulge taste on individual items. People who eat a Mediterranean or Middle Eastern diet do not suffer from the chronic obesity, hypertension, and assorted cancers that americans and northetn european people suffer from in huge numbers. They basically use locally available fresh ingredients and cook at home. Much healthier!

I have been making this for a while now, though I must admit I add other stuff like potatoes, carrots and paprika. I like it so far.
Here in Palestine we use only olive oil...was a great video..thank you..my childrens favorite dish as long as u have yogurt on the side!

I cooked the lentils 5 minutes in my pressure cooker and then put everything with the rice in the rice cooker. Very easy! Very yummy :)

Vidalia onions have a natural sweetness to them without the need for sugar.

I want tradirional cake (not flour) wheat maybe. Long time i ate that cake one made by a jordanian lady.
